Meet your merchant • Ulrich and Ann Duttman run • the bakery in Hensall. They both left Germany for Canada in 1956. Ulrich coming to Elmira and Ann to Floridale. Soon after their arrival they met and married. -- Not .knowing Eaglish they first worked in tobacco on a Men- nonite farm, but when Ulrich could speak English he wanted to return to his trade as a baker and after awhile managed to get a job in a Kitchener bakery. Ulrich started learning the bakery trade as a boy of twelve, and after three years at a trade school in Germany was proficient at his trade. Running one's own bake shop is exactly that! Ulrich was almost running from oven to work table, to shelves etc. all the time he was. being interviewed. Doughnuts to turn, to cut, to dip in glaze, pastries to cut. to fill. to bake. The jobs are never ending and movement from one area to another is always on the double". Al the same tine Ann is ser- ving customers, answering the phone. carrying finished products to the display counter and helping with the braking jobs as well. Ulrich and Ann lived in Blyth for ten years before coming to • Hensel' three years ago. 'Ariel% worked in the flour mill in Blyth. They have five children, two boys and three girls, and the boys help with the baking from 6 to 7:30 a.m. and the girls help in the store atter school so Duttman's Bakery is a family affair. They Also employ one part-time helper. A bake shop has existed in Hensall since early in ME cen- tury, but was on. the corner, two stores away from its present situation. The present ovens are about 52 years old and were built of fire -brick by a man from Montreal who still keeps a check on their Condition. They are still fired with coal.
