Milk to store on shelves
Mould you store milk on the
shelf, without refrigeration, for
six months?"
Of course not – but it's being
done routinely in Europe,
Africa and even in some
Canadian itLstirtitions.
• The secret is "sterilized"
• - milk (in its commercial sense)
— raw ain't subjected to a high
temperature to kill all
microorganisms. This ultra
• high temperature milk, when
sealed in air -tight containers,
has a shelf life of six =friths.
Its food value is the same as
pasteurized milk. It must, of
course, be refrigerated after
openins„ just like pasteurize
milk,.
The milk is sterilized by
heating it to 285 degrees
Fahrenheit (145 degrees
Celsius) for three seconds.
Pasteurized milk is heated to
165 degress Fahrenheit for 15
seconds.
UHT milk is common in
Europe and some parts of
Africa, where refrigeration is
not as widely available as. in
Canada. A dairy in Toronto is
now producing the milk, chiefly
for sale to institutions. Another
. in Quebec City will be turning
out uirr milk this fall in one -
litre, brick -shaped packages
for the retail trade.
Ina milk has been late in
arriving in North America
because our dairy indnstry is
geared to refrigerated shipping
and storage. However, Claude
Lambert of Agriculture
Canada's Dairy DiviSion sees
three reasons for producing the
milk here.
"Because it . needs no
refrigeration, it • conterves
energy and minimizes the cost
of handling and storage," he
says. "And it is ideal for remote
areas, like northern con-
struction sites, where
refrigeration is scarce."
UHT milk could eventually
be useful to the dairy industry
in compensating for the' flub -
mations in production.
"Milk production peaks in
summer and drops in winter,"
Mr. Lambert says. "Some of
the summer milk could be
sterilized and stored
economically until needed in
the winter."
The success of um milk in
Canada depends on consumer
acceptance. Agriculture
Canada's Food Advisory
Service taste -tested UHT milk
processed in Europe and found
a slight difference between it
and pasteurized milk, •
• "However, the quality of the
raw milk has an influence on
the final flavor of UHT milk,"
Mr. Lambert says. "North
American milk has very high
quality."
The location of UHT milk on
supermarket shelves also has a,
bearing on consumer ac-
ceptance. The Toronto dairy
that first marketed UHT milk
in Canada found that shoppers
were accustomed to finding
milk at the dairy counter, and
overlooked it when it was -
displayed with canned goods.
Milk is only one product that
can be -preserved by UHT
sterilization., Fruit and
vegetable juices may be next in
line behind milk on super-
market shelves.
