Huron County's Rhonda
Ferguson took first ,prize in the
essay competition at the recent
annual Junior Farmer Talent
Festival.
A record 2,300 young people
•(600 more than last year) at-
tended the Festival at the
Royal York Hotel. Over 200
entries competed in public
speaking, folk singing,
photography, crafts and
poetry, among other events.
Participants from Huron
County were: Larry Murray of
Walton in men's vocal solo,
Donna Henderson of Seaforth in
ladies vocal solo, Don Melady
of Dublin and Jim Phelan of
Blyth in photography, Rhonda
Ferguson, Mary Anne
Miltenburg of Lucknow in
Ot
public speaking, Tom and Don
Melady of Dublin in musical
presentation, ai,d the modern
square 'dance set from Ceps
tralia College of Agricultural.
Technology.
Winners of the day's events
were featured in the evening's
"Show of Stars," highlighted
with the announcement of the
Junior Farmer Travel
Scholarship recipients. Jim
Phelan of Huron received one
of the United Kingdom
scholarship. '
Dawson City, transfer point
for the 40,000 people who
poured in to the Klondike gold
rush, was named for Dr. George
Mercer Dawson, a Canadian
government geologist.

Rickey is 12, a good-looking blonde, blue-eyed boy. He is in
good health, wearing glasses for near-sightedness.
Extremely sports -minded, Rickey enjoys hockey, soccer,
swimming and skating. But Rickey is not academically inclined
though he is making good progress in a special developmental
class. He will need this special program for at least another year
before he can enter the regular classes. He will likely take a
vocational course later on.
Rickey is good at working with his hands. He has done some
woodworking and he likes building models:
'This likable boy needs a great deal of love and attention
together with the security of knowing he belongs to a family. It
will be good if there are older children in his adoption home.

HE'S SPORTS MINDED

ground beef recipes can easily
be doubled to feed a crowd.
Dishes like chili con carne,
meat balls and meat sauce for
spaghetti all freeze suc-
cessfully and can be reheated
asYou need them.
If you are freezing one of
these main dishes for family
use, be sure 'not to overcook it.
To speed cooling, place the
pans of food ii cold water.
Choose a suitable container size
for freezing. If you have a
limited number of baking
dishes, line the dish with foil
before adding the food. Cover
tightly and freeze, then un -
mold, rewrap and return the
food to the freezer. Be sure to
freeze foods immediately.
• Freshly cooked ground beef
dishes may be frozen kr three
months at 0'. degrees F. or
lower. After this period, the
quality of food may decline in
flavor or appearance.
Borrow this "Chili Con
Carne" recipe from the far
away Latin Americans. The
chili is surprisingly quick to
prepare and tastes as if it has
been simmered for days. If you
want to make a double batch, it
is best to cook the meat in two
lots and then combine with the
rest of the ingredients.
To create your own Latin
atmosphere, dine late, cover
your table with a bright table
cloth or woven mats, use clay
jugs and casseroles. Beer is
usually served with very . hot
dishes, but you could also have
wine. It is customary to place a
large pile of "tacos" at each
end of the table (Tacos are
crisp, cracker -like ac-
companiments made from
corn).
In addition you might serve
fresh vegetable appetizers or
tossed green salad. After
dinner, offer a refreshing
cooler for those unaccustomed
to such spicy foods - like
sweetened limeade. You will
wonder how such an easy meal
could be such a success. Ole !
CHILI CON CARNE
1 cup chopped onion
2 tablespoons fat
11/2 pounds ground beef
1 tablespoon chili powder
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oregano
2 10 -ounce cans condensed
tomato soup
214 -ounce cans kidney beans
Saute onion . in fat until
transparent. Add beef and
brown. Add... remaining
ingredients. Cover and simmer
until thickened (about 20
minutes). Serves six.
