Sold at C Lutz's, Drug Store. 6 A !itntl$ Who Cannat to IpachaI1 I have made a chemical examination and analysis of samples of baking powder taken from nnbroken packages of "Dr. Prices Cream Baking Powder" and of the "Royal Baking Powder," with the following results : 1 I find that "Dr. Price's Cream Baking Powder" cobsiets of the purest 1 attd best materials ; that these materials are so proportioned as to produce the best results ; and that the strength of this preparation, as determined both praotioally by use and as based upon the amount of oarboaio acid gas pro- duced by it, is inch u to give it the very highest efficiency. It is free from alum, ammonia, or any substance of an objectionable chat atter. I that find the ""Royal Baking Powder," while yielding a large amount of carbonic acid gas (though slightly less than Dr. Price's), Contains a pre. paration of ammonia, which I regard as a disgusting and objectionable con- stituent in a baking powder—a drug which ought never to be introduced into the composition of any article intended for loud. My experiments do not confirm the extravagant claims made in the published advertisements of the "Royal Baking Powder" as to its alleged su- periority and greater strength, as shown by the amount cf oarbonio acid gas which it capable of yielding when in use. I have found, by experiment, that the volume of gas yielded by equal weights of the two powders was greater with "Dr. P'rice's" than the "Royal." In of these facts, I regard "Dr. Price's Cream Baking Powder" as superior to the "Royal. Baking Powder," beeause, 1. It is scientifically proportioned, from the purest and best materials known, and is free from anything in the slightest degree objectionable. 2. Its capacity for raising bread (or gas -producing power) is greater than the "Royal," both by practical test in baking and by the determination of the carbonic acid gas. Respectfully, JAMES F.
