of drained .fruit juice at one time.

3. A large, deep saucepan is best
for 'such: mixtures which tend.

juice. Mix ° one teaspoon fruit
juiu& and one teaspoon rubbing
alcohol and in a matter of a few
'seconds. the mixture should begin
to 'clot. if it doesn't clot add a
tablespoon of lemon juice to the
eight cups of liquid and a little
more sugar -=this test mixture
crust. be put down the sink as it
is poisonous. -

Combine one'and three-quarters
cups each of red currant and .rasp-
berry •juice . and boil ten minutes.
'Add twoand one-half cups sugar
and boil until itreaches the jellying
-stage--approximately six..nirnutes.
'GOOSEBERRY JAM
Wash., and • top and • ,tail goose-
berries. To four cups fruit (i%.
pounds)" add one-quuter .cup water.
Cook 'till berries are tender. Add
one and one-eighth pounds sugar
;xiid stir `until dissolved; Boil five
minutes. ' Pour•'into sterilized jars
and seal With' pai`owax.

1 cup, mashed berries ''
4 cup water
1 tablespoon ' Iemon pectin
3/4' tablespoon leucon juice
% clip sugar
Add' water ,and' lemon juice to
berries. Cook slowly until soft,
Acid lemon, pectin . and sugar. Mix
thoroughly and bail to the jellying
point. .
CITRON, 'MELON PRESERVES
Remove the green outer rind and
cut , the melon in 1 -inch. • cubes.
'C'over with boiling -water -and cook
until tender and transparent:.Drain
carefully: •, For each- pound • of
melon; make a 'syrup 'r' of three :.
quarters cup sugar ° and one-half
Cub" 'water and skin, thoroughly:
Then add the melon and one lemon,
cut in slices and one ounce of pre-
served„ ginger for each • »pound of
'fruit. Cook all together _twenty to
'thirty minutes. Carefully remove^
the melon to hot sterilized jars.
Boil ',the 'syrup ,till rich !and thick
and pour over the fruit- in the -jars.
