Getting to know
A few facts about your fine

DASHWOOD - With Thanksgiving quickly ap-
proaching and Christmas just around the corner, turkey
is on the minds of many people who celebrate these
two festive seasons with our fine feathered friends.
But some people know little about turkeys, other
than they taste good.
Since the Hayter family of Dashwood has been in
the turkey business for more than 46 years, they
seemed the best people to ask for some turkey facts.
As many may know, Hayter's Turkey Farms Ltd.
was first opened by Harry and Frieda Hayter and is
now a family affair involving three generations of
Hayters. Key to the operation arc son Tom and his sis-
ter Joanne Maguire along with the help of their spous-
es and children.
During the Thanksgiving season some 10,000 tur-
keys are processed by the Hayters while at Christmas
the number rises to 20,000.
Some facts to consider about Turkeys:

• A male turkey is called a tom, while a female is a
hen;
• The hens and toms first arrive at the Hayter farm
when they are one day old birds. They are then put
into an environmentally controlled barn, called a
brooder house, where they are house for about six
weeks. The birds are then moved to what is called
pole barns which are larger and natdrally ventilates.
• While some people imagine turkey feathers are a
bronze colour, they are in fact white.
• Hens are ready to make their way to the family ta-
ble at approximately 15 weeks. At that time they will
weigh in the neighbourhood of 12-18 pounds. Toms,
on the other hand, are ready at about 17 weeks and will
weigh between 20-28 pounds.
• There is no different taste between hens and toms
its just a matter of how large a turkey you need to
serve.
• Can turkeys fly? Generally, just in the wild. Tur-
keys raised on farms have greater access to food, so
they weigh too much for flight.

Recipes to use up that leftover turkey

Cardiff honoured for his years in House of Commons

More than 600 friends, family,
supporters and community mem-
bers gathered at the Brussels, Mor-
ris and Grey Community Centre on
the evening of September 27 to pay
their respects to recently retired MP
Murray Cardiff.
Cardiff had represented the Hu-
ron Bruce riding, as a Progressive
Conservative, for more than 13
years, until his defeat in last fall's
federal election.
Steve Sparling, a member of the
PC party says, "The guests in atten-
dance were not just typically con-
servative supporters, but were resi-
dents who had voted for Mr.
Cardiff in the past because of the
work he has done for the riding.
The evening was certainly a tribute
to Mr. Cardiff."
"The large gathering is a reflec-
tion of peoples' respect for him,"
he says.
The appreciation night included a
social hour, dinner, and a salute to
the man.
A pictorial presentation gave the
audience an overview of the work
Cardiff had been involved in both
locally and on the international
scene, in support of Canada.
Said Cardiff, "Though new candi-
dates may go into politics wanting
to do work for their own communi-
ty, it soon becomes apparent that

broader views are needed."
"We mus(represent the entire na-
tion - because we are a nation. We
cannot do something (for one area)
at the expense of others," he says.
Sparling said, "The pictorial
showed just how much money Mr.
Cardiff had brought to Huron -
Bruce during his tenure and I am
sure we will be feeling the benefits
for many years."
Cardiff and his wife Betty re-
ceived two gifts. The first, the tradi-
tional PC retirement clock, was pre-
sented by Mary Donnelly and Ken
Campbell, a longtime friend and
campaign manager.
The second was a special memen-
to which "was a wonderful idea,"
said Sparling.
Cardiff was presented with his
chair from the House of Commons,
including a name plate on the back
indicating his years in the House,
1980-1993.
"It is hoped the unique gift will
become an heirloom for the fami-
ly," said Sparling.
Cardiff thanked all those in atten-
dance for the wonderful evening
and then entertained with a few sto-
ries from his time in politics.
One story which brought laughter
to the audience concerned the quick
wit of an elderly resident of Brus-
sels.
"Some years ago, i was visiting a
local nursing home on other busi-
ness when a nurse mentioned i
should stop in and see Mr. Riley
who was over 100 years old," said
Cardiff.
"Mr. Riley had been a friend of
my father's and i had known him
throughout the years."
"When the nurse told Mr. Riley
that I was going to stop by, his
quick reply was 'Is it election time
again?'."
"There are many things I miss
about (public life). I don't get to as
many activities as I did before, but
there are many aspects I don't miss
at all," he said.
Since his retirement, Cardiff has
been staying busy on the family
farm in Grey Twp. and finishing up
business in Ottawa.
"After so many years, there is a
lot of things to take care of and fin-
ish off. I still receive one call per
week from people looking for assis-
tance. This is alright," he smiles.
As for his future plans, Cardiff
said he may go into market devel-
opment, but didn't wish to disclose
too many details as several options
were being looked at.
From the day following the elec-
tion, Cardiff said he knew he was
finished with politics and any in-
volvement in the future would only
be in the backroom.
During his time in politics, Car-
diff served on standing committees
concerning agriculture, trade, fi-
nance and economic affairs.
Hc represented Canada on trade
missions to China, Southeast Asia
and Africa as well as acting as the
parliamentary secretary to the So-
licitor General, Deputy Prime Min-
ister and the Minister of Agricul-
ture.
