As usual, heat oven to 350 degrees.
Then spray some of that nonstick stuff in a pan. _ -
Throw the granulated sugar, cocoa, flours and baking powder togeth-
er in a red bowl.
In a green bowl, whip the egg whites around until they're really
foamy.
Dump in the applesauce, but-
termilk and vanilla.
Add mixtures together.
Toss in walnuts.
Pour it all into the pan and bake
for about half an hour or until it's
done.
Cool it off in the pan on an old
wire rack.
For a finishing touch, sprinkle
the brownies with powdered sug-
ar.
If you cut carefully, you might
end up with 18 skinny brownies.

Cook the cranberry sauce over medium-high heat until it's completely
melted. This should take a4out five miptttes.
Remove it from the h" and etdd the ekatin and boiling water. Stir it
until the gelatin has disappeared.
Stir in lemon juice.
Put it in the fridge (if you have
space) until the batch gets thick. 1 can (16 oz.) whole berry
One and a half hours should do the cranberry sauce
trick. 1 envelope (about 3 oz) rasp -
Add yogurt to the mixture and berry flavor sugar -free gela-
mix it up until it's extremely fluf- tin

Plop the grapes and oranges in. '1T lemon juice
Spray a 4 -cup mold with non- 1/2c nonfat plain yogurt
stick stuff. 1/2c seedless grape halves
Pour the mixture into the mold 1/2c diced peeled navel orange
and put it back in the fridge for Lettuce leaves (garnish)
maybe two hours.
Put fancy lettuce trimmings around a plate and pop the salad out of the
mold onto the lettuce.
This dish serves eight people of average height.

Goodies that are good for you
A few simple substitutions means you can feast and not worry about added fat
Christmas recipes don't have to be fattening. Using fat-free
and unsweetened ingredients, light margarine and egg whites
gives you a healthy alternative to traditional calorie -heavy
foods.

Healthy stuffing
Cook the onions, celery, parsley, poultry seasoning and pepper with
margarine in a pan over medium-high heat until the vegetables are ten-
der. This usually takes about 4
and a half minutes.
Mix around the vegetables,
chestnuts, bread, crackers, rai-
sins, juice, milk and egg sub-
stitute in a huge bowl.
Spray non-stick stuff on a
clean baking pan.
Dump stuffing into the pan
and cover it all with shiny foil.
Bake it at 325 degrees for
about 45 minutes or until it's
done.
Unless the people you're
serving are really hungry, this
should serve about eight of
them.
