Duck hunting season does not officially open until the end of September but many sportsmen are already preparing by scouting spots, building blinds and training their dogs. For many this is a sad re- minder summer is almost over and the days of fall- ing leaves and frosty windshields can't be far ahead. But for the sportsman, the autumn chill brings with it a sense of anticipation. September 5 marked the early goose hunting opener and duck season is only a few short weeks away. Anyone who knows a waterfowl hunter will confirm they will be keeping their eye on the ho- rizon for flocks of migrating ducks and geese. For many, hunting is a tradition carried on through generations of families and for the re- sponsible sportsman, it requires much preparation. Exeter Game Farm, a 200 acres hunting preserve 21/2 miles west of Exeter on Huron Street provides many hunters, especially those with dogs, a op- portunity to hone their skills. Angelo Fragiskaton stocks the farm with pheasants, quail and chukar partridge. Although these are upland game birds, they give all bird-dogs a good sense of what they are looking for on land or in the water. A game fam is an excellent place to train gun -dogs skills like flushing, pointing and retrieving in a controlled environment. The private preserve can be hunted year-round. seven days a week. A good dog is an essential tool for both upland and waterfowl hunters. Seg -Mar Kennels. R.R. Fullarton, specializes in breeding golden retrievers from a long line of field trial champions. Melissa and Glen Wettlaufer find golden retrievers to b.: ex- cellent all-round sporting dogs, comfortable on land and in the water. To follow up the purchase of a pup, Melissa offers obedience training for dogs with their handlers. Besides training dogs and sharpening shooting skills, most hunters are preparing for the upcoming season by scouting favorite spots and building blinds. A good blind provides sportsmen with cam- ouflage at a strategic point where they can wait for flocks to come in. A popular hunting spot in Huron County is Hul- lett Provincial Wildlife Area, managed by the Min- istry of Natural Resources. Hunting is permitted daily at Hullett with all provincial and federal regu- lations in effect. During opening week of water- fowl season, hunters may be required to participate in a daily draw. Draws ensure an equitable alloca- tion of hunting opportunities and a sate hunt for everyone. The marsh at Hullett provides habitat for a variety of plants and animals and is an excellent place to see wildlife. Canoeing is the most efficient trans- portation in the marsh since motorized vessels of any kind are prohibited. The trails and dyke tops are good for hiking and bicycling and viewing stands attract many bird watchers. Duck with Honey This recipe is from the cookbook Gourmet Game by Philippa Scott This recipe has never failed me. The duck is tender and juicy, and the fat is somehow transformed by the honey into an intense, delicious juice. 1 prefer buckwheat honey for this: it has a distinctive taste which blends well with the spices. A slightly different emphasis can be given to the flavor with a hint of cin- namon (a piece inside the duck, or a little ground cinnamon rubbed into the skin). or with a little fresh gin- ger. Ingredients 1 large duck 1 teaspoon fennel seeds twist of lemon peel juice of I/2 lemon I teaspoon cumin seeds I small onion salt and black pepper 2-3 tablespoons clear honer Prick the duck all over, then leave it in a bowl of hot water for 30 minutes. Grind the fennel and cumin seeds together. Pat the duck dry. then rub in the ground spices all over. Put the lemon peel and small onion inside the duck, sprinkle with salt and pepper, lay it on foil, then dribble the lemon juice and honey over. Wrap tight- ly with several layers of foil, so the duck is completely sealed in, place on a baking tray on its side. Roast at 220 C/425 F for 1 1/2 - 2 hours, turning to other side halfway through cooking. Serving is a bit tricky. 1 cut the foil open, turn it hack and serve it like that on a large platter.
