Time for sweet corn
Recipes that are fun, easy to make and perfect for summer meal
Ontario Sweet Corn is synonymous with
August, when its sweet, fresh taste is a perfect
foil for those hot summer nights. When buy-
ing sweet corn remember that they're best
when cooked immediately after picking. If
you have to travel, pack fresh corn in a cooler
for that trip home. These appetizers are fun,
easy to make, and perfect for an appetizer
tray or served as a salad with other finger
foods like barbecued spareribs and chicken
wings.
• 6 cobs Sweet Corn husked
• Bottled oil and vinegar dressing
or Salsa Mayo
With a sharp knife, cut cobs crosswise into
approximately 1.2 inch (1 cm) slices. In large
pot of boiling water, parboil corn coblets for
3 to 4 min. or until almost tender. Drain well.
If using oil -and -vinegar dressing, place hot
corn coblets in Targe bowl and cover with
dressing. Allow to stand until cool. Drain
well before serving. If using Salsa Mayo, cool
coblets and serve with Salsa Mayo as a dip.
Salsa Mayo: Combine 1/2 cup (125 ml)
mayonnaise with 1/4 cup (50 mI) bottled hot,
medium or mild salsa. Makes 3/4 cup (175
ml). Preparation time: 15 min. Cooking time:
5 min. Serves: 8.
Grilled corn with International butters
You're in for a real treat if you've never
grilled sweet corn in their husks. Don't worry
when the husks burn and char on the bar-
. becue, because the kernels underneath will
still be moist and juicy. Team up the cooked
corn with a selection of internationally fla-
vored butters for a round -the -world taste,
right in your own backyard.
Preparation time: 30 minutes. Grilling
time: 10 to 12 min. Serves 6.
• 6 cobs Ontario sweet corn
• International butters (recipes follow)
Carefully peel back husks on each ear of
corn but do NOT detach. Remove and dis-
card silk. Pull husks back up around corn; tie
snugly at the tip with heavy kitchen string.
Soak cobs in cold water 20 min. Drain. Grill
over medium heat 4 to 5 in. (10 to 12 cm)
from heat, 10 to 12 min., fuming frequently,
until husks are blackened in spots. Cut off
string and remove
husks. Serve immedi-
ately with Inter-
national Butters. .

Cilantro Butter
Beat together 1/2
cup (125 ml) butter,
softened, 3 tbsp (50
ml) lime juice and 2
tbsp (25 ml) chopped
fresh cilantro. Makes
about 2/3 cup (150
ml)
Salt and
Madagascar
Peppercorn Butter
Beat together 1/2
cup (125 mI) butter,
sofetneed, 1-1/4 tsp (6
mI) crushed coarse
salt and pepper to
taste. Or use a com-
bination of crushed
black, green, red and
white peppercorns.
Makes about 1/2 cup (l25 ml)
Oriental Honey Teriyaki Butter
Beat together 1/2 cup (125 ml) butter, sof-
tened, 1/2 cup.(50 ml) liquid honey and 1
tbsp (15 mI) teriyaki sauce. Makes about 2/3
cup (150 ml)
