Fabulous Brown S Sugar Fudge This is a recipe that has conte down from the time of our great or earlier grandmothers. In those days when all the beating was done by hand several family members would be called on to continue the process. As one person's arm tired out another would take over. With the use of an electric beater the whole beating process can now be speeded up to a matter of a few short minutes to achieve the smooth creamy texture which makes this a favourite. 3 scant cups of brown sugar 1 cup 18 percent or table cream • Cook on medium to low burner until mixture forms a soft ball in cold water. Bubbles qn surface will be shiny and "popping". Remove from heat. Ad: two tablespoons of butter one teaspoon of vanilla • Beat until mixture thickens and lines left by beater stay on surface. Peanuts may be added here. Preferably shelled, unsalted, but salted are okay, too. • Pour into a buttered plate or dish. Must be done quickly at this point before mixture hardens in kettle. If fudge is too hard or sugary it has been cooked too quickly or too much. • For chocolate replace a 1/2 cup of sugar with 1/2 cup of cocoa.
