I came across this recipe while 1 was
looking for a change from the ordinary pork
chops and applesauce combination. It is easy to
make, and 1 have used the sauce with chops, tenderloin or
a small roast. Unfortunately, I haven't been able to find
the dried apples locally, so when I ran out, I had to just
use more raisins and apricots.
Heat a small amount of vegetable oil in a frying pan.
Cook until they are browned on both sides (6-8 min).
4 pork loin chops.
Take them out of the pan and drain any fat out of it.
Put 1 cup of orange juice in the pan with 1/4 tsp allspice
salt and pepper to taste
1/2 tsp Worcestershire sauce
Simmer this and scrape up the brown bit from the bottom
of the pan. Add:
1-1/2 cups assorted dried fruit (apricots, raisins, apples,
etc.) and 1 more cup orange juice
Simmer about 15 minutes until the fruit is tender. (If it
gets too dry add a little water or more orange juice).
Thicken with about 1-1/2 tsp cornstarch dissolved in
some hot orange juice. Put the chops back in the pan and
warm them thoroughly. Serve the sauce over the chops
with rice or noodles.

HENSALL - Join the Hensall
Community Drop -In on Thursday,
February 16 at the Hensall United
Church. Activities include foot
care at 10 a.m., and exercises at 1
p.m. after the meal at 12 noon.
There will be cloggers to entertain
the group, and public health consul-
tant Sandra Feltz will be giving a
presentation. Helen McLean will
give a special reading.
The day will end with card
games. The cost is $4 per person
for the meal and program. Reserve
a space by Monday noon by calling

celebrates a snowy
outdoor wonderland
Poker rallies by car, snowmobile, and
skis are planned for this weekend
KIRKTON - For those who are
looking to have some fun with the
winter weather, the annual Kirkton-
Woodham Winter Carnival is this
weekend.
A mixed sno-pitch tournament
will run nearly all day Saturday,
from 9 a.m. to 4 p.m. and a dance
will be held at the Community Cen-
tre that evening, starting at 8 p.m.
The dance will include the
crowning of the Carnival's annual
Snow Queen, and there are seven
contestants in the running this year.
An interdenominational church
service will be held Sunday morn-
ing,'followed by three rallies that
afternoon. A cross-country skiing
poker rally on mechanically -
groomed tracks is aimed at the
most active participants. There is
also a snowmobile poker rally, for
those who prefer motorized trans-
port. And a car poker rally is
aimed at those who prefer to keep
warm. Ail three start at 11 a.m.
Horse-drawn sleigh rides around
the Community Centre will go on
all day, and a pancake and sausage
breakfast/lunch will provide nour-
ishment for the visitors.
The annual Carnival, held since
1970, donates all its proceeds to
"youth betterment" in the Kirkton-
Woodham Community, including
support for Boy Scouts and Girl
Guide groups.
