SWISS STEAK .
Fall days bring out the best of
a hotnemakerl We can cook
up a hot oven meal and feel
like it actually does - -
something good in the house.
The smells taunt the visitor, the
kitchen warms -up toasty for
the returning school children,
the meal can be prepared
and simmering all day --now
does that save time or what!
Here is one of my family
favorites for a windy, cool
day. ' •
2 to 3 lbs. stewing beef
(frozen)
2 to 3 large onions
quartered
3 to 4 carrots chopped in
Targe chunks
2 stalks of celery
chopped In large chunks
1-28 oz. can of diced
tomatoes
or 2-10 oz. cons of
tomato soap
or 1 can of tomato soup
and 1 bottle of
homemade
spaghetti sauce
1 tsp. salt ' •
1/2 tsp. of pepper
1 tsp. of basil
Put all Ingredients in a
roasting pan using one Qf the
three options for sauce. Let
simmer In a slow oven all
afternoon (at least 3-4 hours
is even better). Serve with
roasted potatoes for a
delicious meal. Enjoy!

Letters to the editor
SHDHS provides best experiences possible
-"I encourage those of you who
find it so easy to criticize teach-
ers to spend some time in the
schools..."
Dear Editor:
Now that job action seems to have become a reali-
ty, i finally have time to sit down and write a letter.
Let me ,preface this letter,by saying that I am proud
of -the work my colleagues and I do and i love my
job. Saying good-bye to my students and locking
my classroom door on Friday were two of the most
difficult tasks i have had to do in a long time: how-
ever. 1 do not believe I had a choice.
Is this because 1 am afraid of the consequences of
"disobeying" my teachers', federation? Frankly, 1
consider the implication an insult - to insinuate that
1, as a professional, cannot make my own decisions
reduces me to a puppet on a string.
While t would much rather be in my classroom
teaching than on a picket line, this government has
left teachers with no alternative. What began as a
fight against cuts to the classroom has now become
a fight for democracy against' a government who
will, because of a lack of consideration of long term
consequences, and by .placing the almighty dollar'
ahead of our students. destroy a public education
system and undo the collective bargaining rights of.
a group of professionals who have fought hard. not
only for themselves, but for the children.
Nothing infuriates me more than to listen to the
ignorance of those individuals who insist that teach-
ers are overpaid, underworked, and responsible for
the "struggling schools" or the dreadful fate of the
public education system. As i look out my window
this Saturday afternoon, 1 see field hockey teams on
the playing field at South Huron and 1 think of my
colleagues who not Ohly devote after-school hours
to coaching, but weekends also. I think of the "off-
duty" hours several staff members donated in the
past couple of weeks to ensure that fundraising dol-
lars could he generated and utilized on school reju—
venation projects and co -curricular programs. 1
think of the technology teachers who arrive early.
work through lunch hours, and personal preparation.
time to fix school computer problems. and of the'
music teachers who nor only rehearse with students
morning. noon and night, but spend weekends per- .
forming. Then. 1 think of the teachers who are criti-
cized by the public because they arrive at school at
8:20 a.m. and leave at 4:00 p.m., but take with them
hours of marking or school projects like the compo-
sition of a student study guide or new curriculum.
How easy it is for an ill-informed public to criti-
cite what teachers do because they believe the prop-
aganda in the media. buy into Mike Harris' blatantly
outrageous lies. •and, are sure that Mr. Smith next
door leaves for school at 8:30. teaches 3.75 .hours,
arrives home at 3:45 p.m., and does nothing school-
.related before 'or after. if my colleagues and I to-
talled up the number of hours we• teach, prepare,
provide feedback and extra assistance, work on co -
curricular activities and special educational -related
projects, our wages and summer holidays may not
be worth the contracts on which they are written.
1 encourage those of you who lind it so easy to
Criticize teachers to spend some time in -the schools, .
to educate yourselves about what teachers actually
do, and to find out all that you can about the pro-
posed Bill 160.. Ask students why 1. like so many
others. could not send textbooks home with all of
my 94 students. Find out how much money has al-
ready been cut from the education system. While
you are at it, ask students why we. especially at
South Huron, have so many great things going on.
Most will be able to tell you that South Huron is an
"awesome" school because we have great "kids" and
many staff members who work extremely. hard to
ensure that our students are provided with the best
academic and co -curricular experience possible.
Sincerely,
Jodie Baker
