Chili Sauce
As we swing into the fall there is nothing that can bring
back special memories like a cool, windy fall day with
bread baking/and tomatoe-y smells. That was my
grandma's kitchen. She was a terrific canner, baker, cook.
Things always tasted better at grandma's! The following
recipe comes from her kitchen. This is a dark, rich, red chili
sauce terrifjc with roast of beef or steak. Enjoy!
16 cups coarsely chopped peeled tomatoes
4 cups chopped peeled apples
4 cups chopped onion
1 cup chopped green pepper
1/2 cup chopped sweet red pepper
2 cups celery chopped
3 cups firmly packed brown sugar
-
' 1 tsp. cinnamon
• 1 tbsp. each of allspice, mustard seed
1 tbsp. salt
3 cups white or cider vinegar
Bring all ingredients to a boil, and cook uncovered 2 1/2
hours. Seal in sterilized jars.
* Spices can be changed to 3 tbsp. pickling spice, 1 tsp.
each of nutmeg, celery seed, allspice, cinnamon, cloves,
and ginger.
