The air conditioning makes the physical part of Fun and Fitness easier for everyone. Tracy Whitson Bahro of Exeter Presbyterian Church led our wor- ship service Tuesday afternoon. there was a good turnout and resi- dents enjoyed singing their favorite hymns. Nursing home residents were out- doors under the shade tree for a barbecue on Wednesday. The Aux- iliary staff take everyone outside as often as possible. Thursday afternoon, the baking group stirred up batches of cheese scones and raisin scones. They were sampled warm from the oven with a cup of tea. The Ice Cream Parlor took place outdoors Friday with over 20 resi- dents taking part in the creativity with ice cram and toppings. In the evening Martin Gelinas and his son Marcel provided entertainment for Friendship Friday in the lounge. Family members, volunteers and guests from the Northcrest Apart- ments also came for the evening. Coming Events July 23: 4-7 p.m. Trip to Gaschos pond for fishing and a picnic. July 27: Trip to Clinton Raceway and a picnic. it's 1 IRaspberry 'timem BERRY SHORTCAKE • 1 light or regular 32Q g (12 oz. approx) pound cake • 1 L (4 cups) crushed fresh Ontario berries • 375 mL (1-1/2 cups) whipped cream 250 mL (I cup) halved or whole fresh Ontario berries 1. Slice cake into 12 slices 2. Spoon 500 mL (2 cups) crushed berries over 6 slices 3. Place remaining cake slices on top and spoon remaining crushed berries over all. 4. Top with whipped cream and halved or whole fresh Ontario berries. 5. Use fresh or fresh -frozen strawberries, raspberries or blueberries. BERRY SUNDAE PIE • I baked pie shell or crumb shell • iL (4 cups) vanilla ice cream • 1 L (4 cups) fresh Ontario berries • 75 mL (1/3 cup) sugar • 25 mL (2 tbsp) cornstarch • 25 mL (2 tbsp) lemon juice I . Gently spread ice cream over pie shell or crust; freeze. 2. Sauce: Crush 500 mL (2 cups) berries; add sugar and cornstarch 3. Cook and stir over medium heat until mixture begins to thicken 4. Stir in lemon juice; continue cooking until thick and clear 3-4 min. Chill 5. Fold remaining berries whole or halved into sauce. 6. To serve. Spoon berry sauce over ice cream. Garnish with mint, or additional berries, if desired. BERRY LIMEADE Combine 200 mL (3/4 cup) sugar with 300 mL (1-1/4 cups) water; boil 3-5 min. Cool. Add 200 mL (3/4 cup) water, 300 mL (1/1-4 cups) fresh lime juice and 300 mL (1-1/4 cups) pureed fresh or fresh -frozen Ontario berries. Serve chilled with extra fruit or mint • leaves. DELUXE FRENCH TOAST r- 6 SERVINGS FROZEN FRENCH TOAST OR • 375 mL (1-112 cups) creamed style cottage cheese • legg • 25. mL (2 tbsp) sugar , • 12 slices bread • 3 eggs • 75 mL (1/3 cup) milk • 500 mL (2 cups) fresh Ontario berries whole or sliced For Prepared Frozen French toast... Cook according to package directions, serve with 75 mL (1/3 cup) frozen berries, sliced, whole or crushed. o To Make from Scratch... 1. Combine cheese, egg and sugar. 2. Spread 1/2 bread slices with mixture, cover with remaining slices 3. In a separate bowl, thoroughly combine eggs and milk 4. Dip sandwiches into egg/milk mixture to coat both sides 5. Cook in a hot frying pan to brown on both sides; hold warm in oven 6. Serve topped with fresh whole, sliced or crushed strawberries, raspberries or blueberries BERRY LEMON YOGIJR- • 250 mL (I cup) fresh Ontario berries • 125 mL (1/2 cup) plain yogurt • 200 mL (3/4 cup) milk • 15 mL (1 tbsp). sugar • 5 mL (1 tsp) grated lemon peel Place all ingredients in an electric blender or processor, blend for 1 min. until smooth and creamy.
