Tips For Cooking With Milk
Baked Goods: ingredients for baking need to be
at or about room temperature to ensure even
mixing and best results. Milk is no exception.
Remove the chill from milk by using your
microwave or by letting the measured
amount stand until it reaches room
temperature. It takes only a short time to
bring it to optimum baking temperature.

Custards and Puddings: When large amounts of milk are used for
baked desserts it is best to preheat or scald milk before using to
prevent scorching or protein formation on top.
Cream Cheese Mixtures: Mix milk gradually into beaten cream
cheese mixtures like cheesecakes or dips to prevent lumping.
Sauces: Stir milk -based sauces constantly to ensure a smooth,
velvety texture.
Mashed Potatoes: Warm the milk you use for mashed potatoes so
that they stay piping hot for serving.
Acidic Foods: If any tangy flavoured ingredients, such as tomato
sauce or lemon juice, are to be added to a milk -based sauce, be
sure the sauce .is thickened first with flour or corn starch to
prevent. cuing.

* Total net farm cash receipts from the dairy sector for 1997
stood at $3.8 billion, placing the sector in third place behind
grains and red meats. * About 81% of Canada's dairy farms are
in Ontario and Quebec, 14% in the Western provinces, and 5%
in the Atlantic provinces.
* In 1998, there were approximately 1.2
million cows in Canada on 22,643 dairy
farms, producing 79:1 million hectolitres of
milk containing 3.6 kilograms of butterfat
per hectolitre. The primary breeds are
Holstein (comprising more than 85% of
Canadian dairy herds), Ayrshire, Jersey, Brown
Swiss, Canadienne, Guernsey, and Shorthorn.
* Based on official records for all breeds in, 1997,
the average production of cows enrolled in milk
recording programs reached an impressive level of
8,427 kilograms of milk in 305 days oflactation
with a protein content of 3.24% and a butterfat
content of 3,72%. This is among the highest average milk
production per cow in the world.
* The dairy industry operates on a "dairy year" basis which runs
from August 1 to July 31 each year. In 1997/98, the average
Canadian dairy farm had 50 cows.
* . During the 1997/98 dairy year, dairy products shipped from
approximately 270 processing plants were valued -at $8 billion,
accounting for 14% of all processing sales in. the food and
beverage industry. There are approximately 26,000 people
working on dairy farms, and almost 20,400 other workers are
employed in the plants.
