Just the other day we were visiting friends and nad our first fresh rhubarb pie - oh was it good! The following recipe makes two 9" pie plates and I've adapted the recipe to suit my fancy. Enjoy! Rhubarb Custard Pie trepare two 9" pie plates with a basic pie pastry. 9 cups cut-up red young rhubarb 2 to 2 1/2 cup white sugar 6 Tbsp. flour 2 Tbsp. butters 6 Targe eggs 1/2 cup orange juice Comlpine all filling, ingredients stirring well. With a measuring cup!diplhalf of the filling into each pie crust. Gently press rhubarb down to make the itop level. Bake at 400 degrees F. for 15 minutes, then reduce heat to 350 degrees for 25 to 30 minutes or until custard is softly set at centre. As a special addition wheh i reduce the oven temperature I put a topping of 1/2 cup cold butter, 1/2 cup of flour and 1/2 cup of brown sugar crumbled together well and carefully placed over pie. Then I complete the baking. Dare to enjoy, Debby Wagler Centralia Variety 239 Victoria St. 228-6300 Mon.-Turs.8a.m. -9 pie. Fri 8a.m. • 10p.m. Sat. 9.10 Sun. 10a.m. • • '.m.
