Randy has always been the best human guinea pig I've
known. He never complains at the variety of meals I put
before him and be does his best to give good, positive
feedback on, shall we say, most things! It is therefore
imperative that I serve some of his favorite meals from time
to time. The following recipe has been a standby for years
and it is always good, simple and makes a lot! The kids
even enjoy it and with casseroles that is an
accomplishment!
Hamburg Harvest Casserole
1 Ib. of lean hamburger
1 cup of onions chopped fine
28 oz. can of diced tomatoes
1 tbsp. Worcestershire sauce
(or 1 tsp . curry or chili pepper)
1 tsp. salt
2 cups sliced raw potatoes (may need more)
1/3 cup flour
1-2 cup of kernel corn
1 slivered green pepper
1 1/2 cup grated cheddar cheese
Heat over to 375° F. Combine meat, onion, tomatoes,
Worcestershire sauce, salt. Put into a large 9" x 13" pan or 2
casserole dishes (I use one large and one small casserole
dish). On top place in layers the potatoes, flour, corn and
green pepper. Bake covered for 45 minutes. Sprinkle with
cheese and bake uncovered 30 minutes more. EnJoyl — so
good) '
