Despite best intentions,
however, these tasty staples
May be high in fat. especial-
ly saturated fat.
To address this issue, the
Heart and Stroke Foundation
has published a new booklet,

Sponsored by an education-
al- grant froth Becei, this
informative free booklet
recommends three simple
principles when shopping
for and preparing foods:
I.Reduce your total fat
intake, particularly' 5a0u-
rated fat.
2.01 tyre fat you do eat,
layout unsaturated fat.-
?.increase dietary fibre.
By applying these princi-
ples to your family's
favourites. you can put a
heart healthy twist on the
ex cryday dishes ytiu like to
serve:
- Careful substitution of
ingredients is one step toward

• Instead of butter and
shortening. both of which
are high in saturated fat,
choose a vegetable cook-
ing oil or a soft, non -
hydrogenated margarine
That is low in saturated fat.
• Use yogurt or low-fat
mayonnaise instead of
.regular mayonnaise. Even
making it a half and half
mixture reduces the
amount of lat.
• Try substituting lower -fat
.Illeal alternatives, such as
,legumes and tofu. for
'stone of the meal in Ianti
Iy favourites.
Transform your desserts for heart healthy eating: Glazed
Apple Pudding is a great -tasting treat that is high in fibre and
low in saturated fat. Crisp Golden Delicious apples and
unsweetened applesauce give this dessert mouth-watering, rich
flavour.
• To help boost fibre,
choose whole grain breads
and rolls. as well as whole
wheat pasta. whole grain
cereals, brown and wild
rice.
• if your recipe calls for
cheese. select one that is
Icss than 15 per cent milk
fat (milk fat is shown as
M.F. or B.F. on the Zabel).
If it calls for milk, use
skim or one per cent milk.
• Select leaner cuts of meat,
and .remove skin from
poultry and fish.
• Replace up to one-third of
the oil called for in salad
dressings or marinades
with an equal amount of
broth, frozen juice con-
centrate, vegetable purees,
or strong tea.
These simple tips can
also be applied to desserts
for heart healthy eating. This
recipe for Glazed Apple
Pudding is a good example.

Glazed Apple Pudding -
Base •

1 cup (250 Hill all putpusc lluut
1 112 tsp (7 HILI baking powder
1/4 isp O oil-) salt
2 Ibsp (25 mL) soft. non -
hydrogenated margarine
1/2.cup (125 mL) granulated sugar
I egg
1 tsp (5 mL) vanilla
1/4 cup (50 mL) unsweetened
apple sauce
1/3 cup (75 rnL).skint milk
4 Golden Delicious armies. peeled.
cut in half. cored. and thinly sliced
Topping
1/2 cup 1125 nil..) brown sugar
I thsp 115 inL) all-purpose flour
2 tsp (10 tuL) soft, non -
hydrogenated margarine
2/3 cup (150 unL) water
1/2 Isp (2 mil icing sugar
To prepare base:
I. Stir together hour. baking pow-
der and salt: set aside
2. In a medium •howl. -whisk
together margarine. granulated
sugar. egg. vanilla and apple sauce.
Add dry ingredients alternately
with milk to creamed mixture until
combined
3. Spread halter evenly in a 9 -inch
(23 coo springform pan sprayed
with a non -sock cooking spray. •
4 Place apple slices on top of hat-
ter.
M prepare lopping:
I. In a small saucepan. combine
brown sugar. fluor, margarine and
water
2 Bring to a hod. stirring until
thickened slightly Pour evenly
over apples and hatter.
3. Bake in pre -heated 350°F
1180°C) oven for 50 minutes or
until fester inserted in the centre

icing sugar before serving.
Variations: Substitute apples with
other fruits in season. such as
peaches. pears. plums. raspberries
or blueberries -
