200 recipes for colour beans
Cookbook pminotss bean versatility

CREDITON - If you think beans make a boring meal than you haven't
browsed through Dr. Violet Currie's book, Full of Beans.
There are some 200 recipes using coloured beans to make pizza, pasta,
cookies, pastries, bread - you name it and you can probably make it us-
ing beans.
"I had never been involved in putting together a book. It was an excit-
ing process," said nutritionist and former college lecturer Dr. Violet Cur-
rie.
Having written a number of research papers before retiring from Cen-
tralia College in May '92; she thought putting a book together couldn't
be too difficult.
So when the Ontario Coloured Bean Growers Association approached
her with the idea of producing one she accepted their offer of sponsor-
ship.
They became interested in her products during an open house at the
college a few years ago. Members of the association tasted brownies she
had made using coloured beans. "They loved them."
Kay Spicer, a food writer living in Campbellville, helped with the de-
velopment of the book.
Dr. Currie met Spicer at the open house as well.
"She sampled some products I had made and said 1 should put together
a cookbook.
"That's how the collaboration began," Dr. Currie said.
Over the next two years staff and students at the college took part in
taste tests That's how they decided what recipes to include.
The book was launched in Tormttoon June 21 and since then interest
ain it has been steady.
Along with the recipes it also has explanations of the various types of
coloured beans available and how to buy, prepare and store them.
"Most of the'recipes I developed call for cooked beans that have been
put through a blender," she said.

''Aiotof people have difficulty digesting wheat flour so these recipes
we great for people with food sensitivities."
The flour is made using the rvmartno bean. "It's much easier to handle,
especially when making pastries?
Dr. Currie became interested in beans when she owle'to Canada 18
years ago. "I was fascinated with them," she said, "There were so many
around the area."
She devoted a lot of time to researching and studying possible uses of
beans while working as co-ordinator of the food program at Centralia
And over the years Dr. Currie has developed a number of products
made from beans. "It started when I developed an ice cream made with
beans. Then cakes and cookies. It just blossomed."
She said studies are now showing that beans are high in fibre content
as well as protein content.
"There's more to beans than just cooking them. And there's no end to
the amount of things that can be made with beans."

week to prepare the beans
which will be served Sat-
urday between 11 a.m.

slaw, bean salad, buns
and coffee will accompa-
ny ...the traditional baked
beans which will be fed
to some 12,000 hungry
people that are expected
to attend.

600 pounds each night to
accommodate the huge
crowd. The cooking pro-
cess is no easy task ei-
ther, as the beans are
soaked for 10 hours, then

Chairman Doug Erb
says that this years Bean
Fest is going to be bigger
and better than ever with
the addition of more
amusement rides and ex-
tra free parking. Says
Erb, "we try to improve
the Bean fest every year."
One of the features that
seems to gain more popu-
larity each year is the
Custom Rod and Antique
Car show. Over 500
cars, from as far as To-
ronto, Kitchener, Kincar-
dine and Stratford, are
expected to attend the
event.
Frog races are again go-
ing to be offered for the
kids. Anyone wishing to
compete .. in the contest
should register their frogs
on Saturday. Erb pre-
dicts that at least a dozen
frogs will be entered in

the event.
For those coming from
a distance there will be
free camping at the Hay
Township ball diamond,
however it will be first
come first served as there
are already a group of 40
campers from Stratford
and 15 campers from
Clandeboye booked.
Free entertainment for
all ages will be scheduled
throughout the day with
acts like You 4'Ya, Night
wind, Craig Douglas of
the London Laffguards,
the Captain Marvelous
Superhero Show, Posi-
tively Stompin, and a
group of Cloggers. The
entertainment will run all
day on the main stage.
Tired parents are invited
to leave their children at
the supervised play area,
which is run by . the Zu-
rich Playground staff, be-
tween noon and 1:00 at
the Zurich Public School.
