At -this time of year we
are all enjoying the first
fruitsof our labours in the
garden: Onions, radishes,
peas, lettuce, deliciously
fresh, and I'm sure Ross
will soon be coming into
the office with the first of
his many zucchini!
We should not forget,
however, how easy it is to grow green vegetables right in the
kitchen at anytime of the year. Sprouting is easy, bean sprouts
contain valuable amounts of proteins, vitamins and minerals.
The total vitamin content in a"seed can.increase by as much as •
800 percent in only a few days.
We have -all seen and probably enjoyed mung bean sprouts
or alfalfa in the grocery stores, but don't be limited to just
those. Radish and cress sprouts are delicious on sandwiches, -as
are wheat sprouts. (In health food stores you can often find
mixed beans -to sprout.) The sprouts from most legumes, lentils
and large beans should be.steamed or cooked in some way to
.add to their enjoyment.
To grow your own-muttg bean.sprouts:
1. Put about 2 tbsp. mung beans.in a large sealer jar. •Fillithe
jar with lukewarm water andallow-them to stand overnight.
2. Drain offthewater.thenextmotning and cover -the jar
with a piece,of +sloth held on- by an elastic band. Store: in a
.warm; dry,,dart:plare. (Beans sprout best in:the dark."
3. -Rinse and:drain-morning and evening.
4. When the sprouts ttave;'rsaehed:thei rdesitaed-iength,:pour
into a colander,•rinseand enjoy.
To sprout smaller seeds, follow. thesanae:instruetions.'To
tum yoursproutsgreen, simplyexpose them to sunlight, and
after a day you will:have deliciturs-brightgrleensproutsao en-
joy.Thesespttoutstaanthen be stoned:in yourrefrigeaatorfor
severa l:lays.

.they are very did cult -to-do. Barbara Hill,:in herbook'"'llbe
Cook's Book of:Indispensable Ideas",suggests:that:theyc .art -be
grown in'potting soil and about four:days.after they.beginto
grow-they:can be cut and stored:in a plasticcontainer:in:there-
frigerator.

01 -School - got a
jump start on
June with an
Aerobics work-
out lad by Lau-
ra Overholt. For the rust of the
week everyone was supposed to
wear sneakers.
Also that week the new kinder-
garten classes came with their par-
ents to learn about bus safety.
On June 3, grades 1-8 went to the
Huron County Playhouse to see the
production of "Oliver." Sandra and
Hilda Steele from our school were
spotted by most of their school
Mates. Other children from other
schools were also spotted. It turned •
out to be a wonderful day and
many of the children can't wait to
go back next year.
• On Friday, June 4 the grades 3-8
had a presentadtm'by•the• Blueywater
Recycling Program.
On June 7, the Oral -Hygienist :a
came to different classrooms to talk
to .us about -the importance of
brushing and hug every :day;
Mrs. DeJongbroughtinpetridiepes
for the grade :718 :class so they ,
could see the :different amount' f .
bacteria oil their fingers and teeth.
June 8, we held -our school_track
and freldmeet. On June 17;:the sys-
tem :uatck:and field -meet, was held }
in Goderich. It was a scorcher: Eve-
rywhere you looked there • -iAe
tubes of sunian,lotion and:thermos-
es of water. John Oregus came
home tied for .the Top Junior Male
Athlete:
On Monday, June 21 the grade 8
graduating students attending South
Huron had an orientation .day. The
students :met in ..the large gym and
wcre.divided:into,thcir.home rooms
• for the :morning. -The students re-
ceived their .timetables and .met
their.teachers.'fhey.are looking for-
ward to starting high school in ithe
fall.
June 22,.the.grade 8's graduated.
Mass was held.at 6:00 p.m. at Pre-
cious Blood-Mission.They-all took
-part:in the mass: Theresa Wilhelm
-read the first reading •and the re- 1
-sponsoral pta}m, Laura Cook read
_the second trading. The prayers :of
:petition were read by .Darryl Par -
:;sons. Darcie Enever, Amanda Rqgi-
et, Amy Regier and Geoff Stasik.
The Offertory gifts were brought to
the altar by Jennifer Grenier, Re-
becca Renison, Jeremy Van Es-
broeck and Tony Pickering. The
school choir, led by $rends Daslar-
dine sang beautifully for the Mass.
A potluck dinner followed in the
school gym. The 'grade seven stu-
dents did a fantastic job decorating
the gym in the school colours. Af-
ter Father Ragatto said grace every-
one helped themselves to a deli-
cious dinner served by the C.W.L.
This year's awards were as fol-

thank you to the P.T.A. Executive
and President Bill Duckworth pre-
senting the graduates with a silver

dictorian.
