New Year's day is considered the birthday of all Chinese

day he is bom. and another year is added each New Year's
Day.

Year for good luck and prosperity and here is a Cantonese rec-
ipe for Empress Lemon Chicken.
Empress Lemon Chicken
2 tbsp. corn starch
4 tbsp. naturally brewed Kikkoman soy sauce, divided
1 lb. boneless, skinless, chicken, cut into 1 inch pieces
1/2 cup sugar
2 1/2 tsp. corn starcli�
3/4 tsp. grated lemon peel
2 tbsp. lemon juice
2 tbsp. vegetable oil
1 bunch green onions. cut into 1 inch pieces
Combine 2 tbsp. oom starch and 1 tbsp. of the soy sauce in
small bowl. stirin chicken. Let stand 30 minutes. Meanwhile,
combine sugar, 2 112 tsp. cont starch, lemon peel, lemon juice,
remaining 3 tbsp. soy sauce and 1/4 cup water; set aside. Heat
oil in hot wok or large skillet over high heat. Add chicken and
green onions, stir -fry 3 minutes or until chicken is cooked. Re-
move, reduce heat to mediwn-high. Pour soy sauce mixture
into..wok, bring to boil. Cook, stirring constantly 1 minute.
Add ielticken and green onions, stirring to coat 11 pieces well
•-geith sauce. Serve immediately. Makes 4 servingL.

Take Dining to Heart. Take Dining to Heart
will infomi consumers about the availability
of healthy eating choices in our local restau-
rants.
"Huron County residents are becoming more aware of the impact of
nutrition on their health. When dining out, they want to be able to
make the same healthy eating choices that they make at home. Take
Dining to Heart will educate consumers about the healthyitating choic-
es their local restaurant can offer. Following Canada's Food Guide to
Healthy Eating and -reducing the amount of fat in your diet is a sensible
way to lower your risk of developing heart disease," says Take Heart
Huron Dietitian Debra Stewart_.
Restaurants participating in Take Dining to Heart will have table
tents that outline the healthy eating -choices available to their patrons.
These choices include: lower fat milk (2 percent, 1 percent, or skim);
whole grain breads and -rolls; gravies, sauces or dressings on the side;
broiled, roasted or steamed foods; salad, rice or potatoes instead of
fries; and fresh fruit, fruit salad or sherbet for desser..
According to Stewart, many Huron County restaurants already offer
several healthy eating choices. Consumers may just forget to ask for
the lower fat items. The table tents will serve as a reminder to custom-
ers about these healthy eating choices.
