Optimists
appreciate
youth
CREDITON - It was Youth Ap-
preciation Day at the Stephen
Township arena at Huron Park,
Sunday afternoon.
Thanks to the generosity of the
Crediton Optimists club, more than
100 young people took advantage
of a free skating session and en-
joyed a cup of hot chocolate after-
wards. The 'Crediton United Church
youth group also.participated.
In a lucky draw, a GE Walkman
was won by Carie Pertschy of Cre-
diton.
At an Official Board meeting of
Crediton United Church Sunday
night, rates were set for special
programs for the upcoming Christ-
mas season.
On Sunday, December 13 at 10
a.m. the annual Sunday School
Christmas concert will be presented
under the direction of superinten-
dent HarrySchroeder and Lois
Brownlee.
Leader Georgina Grotentraast has
organized a C.G.I.T. vesper service
for Sunday evening December 20
at 7 p -m. and a Christmas.Eve ser-
vice is planned for that night 'at
8:30 p.m.
At Sunday's board meeting Ross
Haugh and Rev. • Ed Laksmanis re-
ported on a recent meeting they at-
tended at Thames Road United
Church.
Under the capable leadership of
Margaret Stewart and Bruce Del -
bridge, members of nine area Unit-
ed Churches discussed the visions
of the future for these churches.
Another meeting on the same sub-
ject will be held on March 8, 1993,
also at Thames Road.
The Town and Country Home-
makers arc looking for a driver to
take shut-ins from the Crediton
area to Exeter each Tuesday be-
tween the hours of 11:30 a.m. and
3:00 p.m.

Legion news
HENSALL - The Hensall Branch
of the Royal Canadian Legion
would like to take this opportunity
to thank Hensel) and Zurich busi-
nesses, residents and area residents
for helping make this years Poppy
Campaign such a big success. Cam-
paign expenses were $386.10 and a
profit of $.1.270.00 rims. realised.
Veterans assistance grants to hos-
pitals, etc. from the "Poppy Fund",
October 1, 1991 to September 30,
1992 Were $810.50.
The Hensall Branch would also
like to thank all those who in any
way helped with the church service

As I was growing (p, 1
often wondered why shon-
bread was only prepared at
Christmas. My mother al-
ways told me that it took
s00000 long to make, and
the ingredients were
s00000 complicated that
once a year was plenty of-
ten to make them. Rather
like a certain television commercial Tor Rice Krispie
Squares...I have certainly Teamed differently!
Shortbread was first prepared in Scotland where it was a tra-
ditional part of the Christmas and Hogmanay (New Year's
Eve) dinner. The classic large round shortbread was usually
notched around the edges to signify the sun's rays.
Flour, butter and sugar arc the three basic ingredients, which
mix together to give the "short" texture that gives it its name.
In Edinburgh a shortbread is often decorated with peel and al-
monds. Ayrshire cooks may add cream and eggs. In the Shet-
landand Orkney Islands, shortbread may contain caraway
seeds and is known as -Bride's Bonn.
All purpose flour is the traditional one to use,°however, some
recipes call for cornstarch as well. This gives a finer texture
and the dough is less crumbly to work with.
Butter gives the rich flavour, but margarine can be used. It
doesn't matter which you use, but only allow it to soften just
enough to mix it in and work with cold hands in a cool, not
hot, kitchen. (Now I realize why my husband keeps the heat
turned back. He is hinting that he wants me to make more
shortbread!) If the butter is too soft, it separate and the dough
is too loose to work with. If your shortbread is brittle, this may
be your problem.
Icing sugar is usually called for in shortbread recipes, be-
cause it is finer than granulated, and gives shortbread that
"melt in your mouth" quality.
You can pat the shortbread dough into a pan and cut it into
bars, roll it out and cut with cookies cutters, or press it out
with a shortbread mold.
My husband has wanted me to make what he calls "Maids of
Honour" for several years now, so in his "honour" I offer the
following.
Shortbread Thumbprints
Sift together:
12 cup com starch
1/2 cup icing sugar
1 cup all purpose flour
Thoroughly blend in and work with the hands until a soft
smooth dough forms:
3/4 cup softened butter
Shape into balls and roll in:
1 cup chopped pecans
Place on baking sheet. Press thumb in centre to make inden-
tation. Bake 15-20 minutes at 300. Remove from the oven, al-
low to cool. Fill centre with raspberry jam or red currant jelly.
Blue Water Rest Home
ZURICH - Thursday six residents
boarded the Home bus at Blue Wa-
ter Rest Home for a trip to Strat-
ford. Glen Thiel was the bus chauf-
feur, Cathy Shantz, Homc Adjuvant
was the convener and Geraldine
Eckel, a staff member and daughter
of one of the residents volunteered
her services to help for the day.
Madeline Harburn, Anna Heck-
man, Edna Johnston, Susan Leslie,
Alma Prance and Mary Romanis-
zyn all took part.
Verde Baechler of Maplevwoods
Apartments and Home Auxiliary
member served Wednesday after-
noon -tea to -the residents and their
family and friends.
Rev. Colin Stover, Grand Bend
.United Church was in charge of
Thursday afternoon chapel service.
Fr. Peter Hayes, St. Boniface
Church, Zurich celebrated mass.
The mornings at Blue Water Rest
Home have been filled with sing-
song, fun and fitness, newspaper
reading and bible reading and remi-
nisce groups. Wednesday was
games night, and Friday the resi-
dents' favourite -bingo!

concoct
goodies
HENSALL - This week at
Queensway, there was a classic
movie afternoon. The African
Queen was featured starring Hum-
phrey Bogart and Katherine Hep-
burn. Bogie was a hit with the la-
dies.
Reverend Phillips from Varna
and Goshen United church was in
to perform a church service last
Tuesday and Floyd McAsh was
the organist.
Sounds of Christmas arc starting
to ring at Queensway. Following
bingo last Monday the Bethel Re-
fromed ladies led a hymn sing in-
cluding some Christmas carols.
Their finale was a wonderful ren-
dition of "Silent Night" in Dutch.
Wednesday evening everyone
was singing along with the Fellow-
ship Singers. Everyone enjoyed
listening to the songs of the Lord.
The baking club was busy this
week making squares for the
Christmas open hosue. All the la-
dies took part irr making magic
cookie bars and no -bake confetti
brownies. Everyone wanted to
sample the goodies, but they'll
have to wait until December 6.
This week started off bright and
early with the breakfast club get-
ting together for a hearty bacon
and eggs breakfast. Thanks to Dor-
othy Brintncll for coming in so
early to help with preparing the
meal.
Just a reminder to the members
of the ladies auxiliary there will be
a meeting on Monday, November
30 at 10 a.m. They will be finaliz-
ing details for the Christmas open
house.
