Tan to participate
From our
kitchen to yours
By T.A. ghost writer Heavenly Devine
It was late summer when
we first moved into our
home. The previous own-
ers had taken what they
could from the garden and
we were left with the task
of cleaning it up and get-
ting it ready for the follow-
ing spring. At the back of
the garden we noticed
some tall attractive looking yellow flowers, but really other
than trying to pick a few for the house we thought nothing of
them.
The next year, we were not so ambitious as our predecessors
when it came to gardening, and those yellow flowers appeared
again, but there seemed to be a lot more of them. After the sec-
ond summer, when the flowers started to pop up between the
tomato plants and the bean plants, we decided to ask someone
what they were. It seemed the faster we pulled them out the
faster they appeared.
Jerusalem artichokes. We were actually growing artichokes!
We loved them, but wondered why we had never seen the
globes appear on them. Maybe we weren't looking in the right
place. Maybe we would have to pay more attention to their
cultivation. No, not globe artichokes. JERUSALEM arti-
chokes. You eat the roots, and they taste not unlike globe arti-
choke hearts. Delicious!
Actually these plants are not artichokes at all, but are related
to the sunflower. The name is actually a corruption of the
French "girasol" or Italian "Girasole" meaning sunflower.
They are native to North America, and the Indians called them
"sun -root". If they are left untended in a garden as ours were,
they can become an aggressive nuisance, spreading by their
roots and seeds.
The Jerusalem artichoke is a tall shaggy looking plants with
bright yellow flowers about three inches wide. The edible tu-
bers form in the fall and look like knobby potatoes. If you are
planning to harvest some of these tubers, watch the flowers.
About six weeks after the flowers have died, you can begin
digging the roots, just like potatoes. Store them in a cool dry
place.
The Jerusalem artichoke is high in food value and minerals.
It's principle food content is inulin, which is converted to levu-
lose sugar. Lcvulose is highly nutritious and the sweetest of all
known natural sugars. It is usually found with dextrose, but is
all alone in these.
To cook Jerusalem artichokes, I normally just wash them,
boil them for 10-15 minutes, then allow them to cool and peel
off the skin. Then I put them back on to boil until they are fork
tender and serve them with butter.
