Sometimes we tend to
take some of the ingre-
dients -we-rose - in seeking
for granted. Reaching into
the cupboard to pull out
baking soda for a recipe is
no problem at all. Howev-
er, it was not always like
that.
Baking powder was not
even created until the m_id 1800s. Until that dme yeast had
been the major leavener, along with whipped eggs; beer, wine
or long mixing. Chemicals in baking powder react with the -liq-
uid in the recipe to create carbon dioxide gas, which is trapped
in a flour•mixture and expand when it is heated.
Baking powders are made up of ingredients such as a starch,
either com or rice flour to absorb any moisture that may be
picked up, baking soda and an acid ingredient which react to-
gether to produce the carbon dioxide. Double acting baking
powder has two active ingredients, one that reacts slowly with
the addition of heat and one that works quickly with the addi-
tion of the liquid.
•The single acting baking powders which were invented first
meant that the cook' had to work very quickly for fear that the
._.gas would all be lost before the cooking started and the baking
would not rise. Today, even though timing is not quite so criti-
cal, do not mix the dry and moist ingredients too soon before
they are to be baked or they will not rise satisfactorily.
These baking powder biscuits are fairly quick to make and
are good with anything.
Baking Powder Biscuits
Heat oven to 450.
In a large bowl, stir to mix well
2 cups all-purpose flour
1 tbSp. baking powder
1/2 tsp. salt
Add and cut in until the mixture looks like fine granules
1/3 cup solid vo atehle shortening
Add and atIr wtlti n fork to form a soft dough
2/3 cup milk
Turn nut nn it lipid/ floured board and knead 10-15 times.
Roll dough until Shall 3/2.3/4 inches thick. Cut with a biscuit
cutter Place nn an uhgreued baking sheet with sides touching
Mr soft biscuits or apart for crisper ones. Bake 12-14 minutes.
Cool net a wire rack.

on Thursday, June 4. This company
is opcn to girls and boys between
the ages of 14-18 who would like
wined the challepgeof Venturers..
The Company will elect its own '
executive and plan their program. If
you want a challenge and a chance
to perform service in your commu-
nity, then venturing may be for
you. No previous experience in
scouting or guiding is necessary.
Many opportunities exist for out-
door activities such as hiking, ca-
noeing, camping, motmtain climb-
ing and exploring. The company
may also provide many social and
educational opportunities for its
members.

South District annual at Dashwood •
Community Centre and assisted in
dedicating two trees which were
planted in Gielen's Memorial Park.
Members also planted a tree at
Usborne Central school this past
month and will plant several more
next spring.
The May meeting was held last
Wednesday at Three A's restaurant.
under the capable guidance of pres-
ident Helen Webber. The reap
then travelled to Exeter Nursery
and toured their premises to seethe
many trees and perennials. Josue
Beaver Martin gave a very informa-
tive demonstration on pruning and
care of trees and shrubs.
The next meeting will be a picnic
held at Marilyn Pym's cottage June
24. The bus trip to Kitche ier's
Farmer's Market/Drayton Theatre
to see "Move Over Mrs. Markham"
and visit the Stone Cmck for sup-
per will be on July I6.
Members wilt also be attending
the Huron South District picnic in
Crediton on July $. Anyone inter-
ested in the activities is welcome at
anytime, simply phone Marian
