This time of year can be
many different things to
many different people. To-
day is Ash Wednesday,
the first day of Lent, in
many Christian Churches.
' The term Lent comes from
the old Etnglitth word "lenc-
ten" meaning springtime. It
is a time of fasting, per-
forming penance and preparation for Easter. Yesterday was
Shrove Tuesday, a day in many countries set aside for feasting
and parades.
The celebration of Mardi Gras, fat Tuesday, began in Paris,
France, where a fat ox was led through the streets. It is the end
of along carnival season which begins January 6. in New Or-
leans, during the week before Mardi Gras, people parade
through the streets in masks and fancy dress, there are street
parades, balls and private parties for a week before the final
Mardi Gras parade, on Shrove Tuesday. In Canada, Quebecers
celebrate Camaval, a time of parades, balls and merrymaking.
There are canoe races across the SL Lawrence and ice sculp-
turing. All ways of celebrating in preparation for the 40 days
of self-denial.
In England, Shrove Tuesday is called Pancake Day, and
many school children throughout this area were served those
for lunch yesterday. We have two favourite pancake recipes in
our home, one for traditional breakfast pancakes and one for
crepes. which are sometimes the favourite breakfast food of
one of our daughters.
Pancakes
Sift and measure
1 1R cups flour
Resift with
1 tsp salt
3 tbsp sugar
1 3/4 tsp baking powder
Beat lightly
1 or 2 eggs (I usually use two but it's not necessary)
Add them to
3 tbsp melted butter
1 to 1 1/4 cups milk
Add these to the dry ingredients and mix. Don't worry if
there are few lumps, they won't hurt anything. Drop onto a hot
griddle and tum when there are bubbles on the top. Serve with
lots of Ontario Maple Syrup. These are also good with a few
blueberries or raspberries added to the batter. m
Crepes
Beat together
1 cup flour
1 cup milk
2 eggs
Pour a small amount, into a frying pan (in our house prefer-
ably non-stick) and swirl it around to cover the pan bottom.
Tum them when the top looks dry. It will only `take a short
time. Sprinkle these with sugar, pour a little lemon juice over
them, roll them up and enjoy! They are good with jam or cin-
namon sugar.

DIAMONDS to hold meeting in Exeter
EXETER - Physically challenged people from Huron County are invited
to attend a general membership meeting in Exeter on Saturday, March 14.
The meeting of DIAMONDS begins at 10 a.m. and will be held at the
Lions Youth Centre on John Street.
This is a self help group for the physically challenged which was first es-
tablished in November.
According to Bev Brown, a community development worker with the
Huron County Health Unit, there were 50 people at the first meeting. Of
those, 18 volunteered to be on the executive or various meetings.
At the meetings, there is entertainment, a light lunch as well as business
to take care of.
"This is a fun group and that's what they want," said Brown.
Ron Airdrie who is a co -chairperson along with Glen McLachlan, said
the group is working on lobbying for improved transportation and better
accessibility to public buildings for the handicapped.
"We got started as a self-help group for the handicapped. A lot of people
can't get out," said Airdrie.

Skaters prepare for weekend Carnival

ZURICH - The Zurich and Area
Figure Skating Club is busy getting
its costumes and special music
ready for the big event of its year -
the annual skating carnival will be
held at the Zurich arena on Sunday
March 15, starting at 2 p.m.
Special guest skaters will be Tina
Muur and Cory Watson. The pair
ranked seventh in the '1992 Canadi-
an championships and come from
the Preston Club.
The theme for this .year's carnival
is "On Broadway'
World Day of Prayer
The annual prayer service will be
celebrated in Zurich at the Mennon-
ncChimeh this Friday at 2 p.m.

Father Peter Hayes has been
away on holiday for the past two
weeks for a well-deserved rest be-
fore the busy season of Lent begins
today, Ash Wednesday.

St. Boniface Separate School will
be having a primary concert on
Wednesday March 11 starting at
7:30 p.m. in the school gym. For

that day at 1:15 p.m. Everyone is
welcome.
