Ice skating is suggested to have
originated in Scandinavia over
2,000 years ago. Excavation of
Roman ruins indicate that skates
tmm this period were made from
polished animal bones for the
blades which were strapped to
boots with leather, probably orig-
inally used as a means of trans-
portation. Skating caught on as a
recreational activity as early as
the 1100's in Britain.
The ice skate as we know it
evolved- through several sedges.
Iron blades are attributed to the
Netherlands about 1250. E.W.
Bushnell of Philadelphia pro -
doted the first all -steel oleates in
1850, which were much lighter
and stronger and kept their edges
longer than iron skates. In 1861,
John Forbes of Dartmouth, N.S.,
developed the first spring skate,
adjusted with a single lever, it
eliminated the -meed for screws
and plates. Eventually this style
was replaced by the skate with

bead.

Coffee was first discovered in Ethiopia, as legend would
have it. when goatherders found that their flocks could not
sleep at night after eating the leaves and berries of the plants.
Before it was used as a drink, coffee was used as a food, wine
and medicine. By the late 1600's there were coffee houses
found all over Europe and the Dutch had begun cultivating it
in Java. in the 18th century, Brazil was (bund to have an ideal
climate and soil type for coffee production, and today produc-
es about 30 percent of the world's coffee crop.
Most coffee types are named for the area from which they
are shipped. Mocha comes from thopon of-Mocba.(AI Muk-
ha) in rarer, and Java coffees arcgmwn in and near the 'g-
land of Java. Coffee manufacturers usually blend several dif-
ferent kinds of coffee beans together to produce unique tastes.
No matter how good the coffee, be it fresh brewed, fla-
voured, freeze dried or instant, it always seems to taste better
when it is accompanied by something to nibble on. 1 think that
this coffee cake is good with coffee, tea. milk, water...
Coffee Cake
Combine and set aside as the topping:
1 tsp.. cinnamon
1 cup chopped nuts (walnuts pr pecans)
1/4 cup brown sugar
1/4 cup white sugar
Grease and flour an 8" square cake pan.
2/3 cup whitc sugar
2 tbsp. shortening (butter or margarine are fine)
1 beaten egg
1/2 tsp. salt
2 tsp. baking powder
1 1/4 cups flour
1 tsp. vanilla
2/3 cup milk
Blend sugar and shortening'. Sur in the beaten egg. Mix salt,
baking powder and flour. Add vanilla to the milk and add this
to the batter alternately with the dry inglediehts, ending with
milk. Spread half the batter in the pan and sprinkle on half the
topping. Add remaining batter and topping. Bake for 25-30
minutes at 350°.
(My neighbour has tried this recipe and places apple slices
on the batter before she adds the topping. Sounds good to me.)
