Ice skating is suggested to have originated in Scandinavia over 2,000 years ago. In 1861, John Forbes of Dartmouth, N.S., developed the first spring skate, adjusted with a single lever, it eliminated the -meed for screws and plates. Eventually this style was replaced by the skate with Made permanently attached to the boot. No matter how good the coffee, be it fresh brewed, fla- voured, freeze dried or instant, it always seems to taste better when it is accompanied by something to nibble on. 1 think that this coffee cake is good with coffee, tea. milk, water... Coffee Cake Combine and set aside as the topping: 1 tsp.. cinnamon 1 cup chopped nuts (walnuts pr pecans) 1/4 cup brown sugar 1/4 cup white sugar Grease and flour an 8" square cake pan. 2/3 cup whitc sugar 2 tbsp. shortening (butter or margarine are fine) 1 beaten egg 1/2 tsp. salt 2 tsp. baking powder 1 1/4 cups flour 1 tsp. vanilla 2/3 cup milk Blend sugar and shortening'. Sur in the beaten egg. Mix salt, baking powder and flour. Add vanilla to the milk and add this to the batter alternately with the dry inglediehts, ending with milk. Spread half the batter in the pan and sprinkle on half the topping. Add remaining batter and topping. Bake for 25-30 minutes at 350°. (My neighbour has tried this recipe and places apple slices on the batter before she adds the topping. Sounds good to me.)
