There are times when my husband is sure that I tum over the whole of my weekly pay checlia T came home with a little treasure the other day, a Dictionary of Word and Phrase Origins by Martin Mrnser. It is a marvellous collection, and lots of fun to read. One of the phrases he has included is the "baker's dozen". The following recipe does not make a baker's dozen loaves, just one or two very satisfying ones. Casrno1e Bread 2 c, wann-(n Trot) water 2 pkg. yeast (or two tbsp.) 2 tbsp. sugar 2 tsp. salt 2 tbsp. butter or margarine 5 c. all purpose flour Put warm water in large bowl with 1 tbsp. sugar. Sprinkle yeast over top and let rest 5 minutes. Stir. Add the rest of the sugar, salt, butter and 3 -cups of flour. Beat with an electric mixer at low speed until blended and at medium speed for 2 minutes. (I only have a small hand mixer, sot use it at high.) . Beat in the rest of the flour with a wooden spoon. ('Ibis is hard, and by the end I have usually discarded the spoon and am using my hand!) Cover the bowl with,waxed paper and let rise in a warm spot until double, 35-40 minutes. Stir down the batter and beat vigorously for 2 minutes. (This is a major test of the -biceps!) /Pour into a greact 2 quart casserole (I use my angelfoctd cake pan for mine), cover and let rise again 25-30 minutes.
