By Jim Beckett
Writers disagree with last week's
comments on Huron Park arena
Dear Sir:
Jim Beckeu's column in last week's paper is another fine example
of poor journalism. If he had just re -read what he had written, he
would have seen this.
To state that Huron Park Arena (Stephen Twp. Arena) is old
(1963) and decrepit (just plain false) proves to me the man has never
been in the arena, or even driven past it in the last 5 years. It is not
our block walls that are disintegrating, thanks to the fine mainte-
nance and foresight of arena manager Frank Funston and staff.
Personally, I would stack the quality of ice up against any in the
area. The same can be said for the quality of kids playing minor
hockey. For the small number we have to work with, there are some
good young players in this "old and decrepit" building.
Maybe our arena doesn't have the glit and glitter of the Exeter Rec
Centre, but our year end deficit is not in the same league either.
Yours truly,
Mike Glavin
Chairman, Stephen Twp. Arena Board
Dear Sir:
I look forward each week to reading Jim Beckett's "On the Street".
This week I am disappointed in him saying the Huron Park arena
is old and decrepit, It can't be that bad or ( am sure Exeter Minor
Hockey parents would not let -their children come to it for hockey
practice.
Huron Park has a well kept arena and good staff.
Maybe Jim Beckett can come out and check it out sometime.

A reply...
It's understandable users of the Stephen Twp.
arena are proud of their building. The point I
was trying to make in last week's column was
Exeter is fortunate to have the use of the Huron
Park facility. With two boys active in minor
hockey I've been to Huron Park -many times
and have always been impressed with the entire
operation.
The availability of early season ice is a tre-
mendous benefit to Exeter's -hockey system.
The heavy ice schedule the Funstons main-
tain each year is- a testimonial to their work.
Describing the arena as old and decrepit was a
poor choice of words. 1 should have said "It's
not fancy but it gets the job done." I'm glad it's
there. -

By the time you read this I expect the South Huron Rec Centre ice
surface to be running smoothly with all programs getting back on
schedule. The installation of the black vapor barrier on the inside
walls will solve the moisture problem but it may be creating a new
one for goalies who may have difficulty picking the puck out of a
different background. Facilities manager Cam Stewardson is playing
down the situation. "The only time I see a problem is when goalies
are forced to handle a long flip shot," he said.
Black background may frustrate goalies

Mayor steals show...
Could it be our mayor Bruce Shaw is using his position as princi-
pal of the Goderich high school to score political points in the
county town? He denies it and I believe him although an article in
last week's Goderich Signal -Star has Shaw looking Tike hero at the
expense of local politicians. The setting was commencement exer-
cises With everything running -smoothly -until ' •to
present the Town of Goderich award to a deserving student. Some-
how the local elected people got their signals crossed and were left
with clothing but egg on their faces when nobody was present to
hand out the award., YOU m c.sseadit, Sbaw ctcpprd.in and according.
taiSignal-Star waiter Shirley Keller he tried to introduce some levity
to the situation when he said that on behalf of the Town of Gode-
rich, the Town of Exeter was presenting the award. Keller continued
by. writing "the joke wasn't all that funny for Goderich folks who
were left red-faced and feeling foolish in front of a class of impres-
sionable young adults who now suspect the town's award is nothing
more than a political ploy to simulate care and concern for the future
of Goderich youth."

Fishers'
changing
hands in
Zurich
ZURICH - Barry Hodgins has
settled into his role as the new
owner of Fisher's Abattoir and
Meats over the past two months.
While he has been in the butcher-
ing trade for 12 years, the purchase
of the long-standing Zurich busi-
ness marks the fruition of the goal
of owning his own operation.
Hodgins thinks that the market
position of a one -roof operation
such as Fisher's is as strong as
ever, or perhaps even stronger now
that some supermarkets are finding
it too expensive to keep a butcher
in the store.
Everything is killed, cut, and
sold at Fisher's, which means the
customer has a say' in the outcome
of the fmal product.
"They can see what they are get-
ting, cut right in front of them-
selves," said Hodgins.
Steaks more than an inch thick
might be hard to find at a super-
market, he said, but at an abattoir,
it is just a matter of asking for
them. That personal touch, he
claims, is what brings the custom-
ers in.
"You catch a lot of people from
the city coming through on their
way to the cottage or trailer," said
Hodgins, which means his busi-
ness is as seasonal as some of the
other tourist -oriented trades in the
area.
Hodgins said Fisher's still buys
its beef and pork locally. In fact,
he buys prize animals from fairs
every now and then. He just
bought a prize 4-H steer from the
Ilderton Fair. It wasn't a bargain,
he said, but the meat is superb.
"It helps the kids out too," he
said. "Plus it's good advertising
for me."
Hodgins prefers to buy smaller
steers and heifers, with his beef
weighing in at about 600 lbs on
the rack. Most are Herefords, the
most popular breed among local
fanners.
Meat can be cut, or sold by the
quarter to those with large freezers.
Wednesday is the day for custom
killing for farmers wanting the best
use of their own stock.
In addition to cuts of meat, Fish-
er's prepares specialty products that
remain very much in demand with
customers.
Both sausage and summer saus-
age are made right at the Zurich
plant. The recipes, of course, are

"Everybody has their own secret
recipe," said Hodgins, who esti-
mates the abattoir makes between
300-400 lbs of the sausage every
week.
They also make their own pepper-
eues, canning beef, corned beef, and
even pickled hearts and• tongue.
Hodgins admits the market for prod-
uct made with some beef parts is
limited, but is dependent on who is
buying.
"The younger genetati n just
don't like it," he .said. However,
this doesn't stop him from making
his own head cheese - which has no
connection with cheese or heads.
"I sell a lot of it too," he said.
