Residents in the Nursing Home
were surprised and delighted by the
antics in the movie ET. It was a
slightly different movie than we are
used to, nevertheless we enjoyed it.

CLANDEBOYE - Congratula-
tions to Wilfred Cunningham who
celebrated his 99th birthday on Feb-
ruary 27. Wilfred is a resident of
Craigholme Nursing Home in Ail-
sa Craig.
Clandcboye resident, Joe Cun-
ningham; who is a 31 year veteran
of the London Police Force, was re-
cently promoted to Second Deputy
Chilef. He will be in charge of the
daily operations of the force. Con-
gratulations Joe!
St. James Church euchre had
eight tables in play. Prize winners
were Ann Gilmour, Bill Dixon,
Olive Simpson, Ed Armstrong,
Louise O'Neil and Ab Gilmour.
The next party will be March 14.
Exeter 4-H club
learns how to
,knit and purl
EXETER - On Thursday, Febru-
ary 16, eight enthusiastic girls
started their Exeter 11 4-11 club at
Lia Snell's. Our other leader is Pam
Walper.
The meeting was started with the
4-1-1 pledge. We also played a game
that taught us about wool and knit-
ting.
We read part of the book and
learned how to cast -on, knit and
purl. We also elect9d our officers
which were President Anne Walper,
Vicc President Christine Chappcl,
Secretary Karen Rohde, Press Re-
porter, Tracy Snell. Our other
members ate Terri Snell, Amy
Walper, KristenChrens and Cheryl
McCarter.

Ladies in the Lodge are working
very hard at their new project. We
are working on a quilt. Wc wel-
come anyone to stop and add a
stitch or two. -
Our Thursday afternoon baking
group made pumpkin' muffins last
week. We are always looking for
newprojects to try and later this
month we will be getting the
dough as we experiment with
bread. -
Special wishes go to Irene and
Ken Johns who celebrated their
54th anniversary last week.
Thought for the week: Remember
when the dime was a week's allow-
ance? Now it's primarily used as an
emergency screwdriver.

Need variety of foods in diet
GODERICH - The majority of
Canadians can obtain the nutrients
needed for healthy living by choos-
ing a wide assortment of foods each
day. Because there is no one perfect
food that can meet all our nutrient
needs, a variety of foods should be
included in our diet. In fact, a diet
that focuses on one or two types of
foods can be detrimental to health.
A sensible diet includes all four
food groups in Canada's Food
Guide (milk and milk products,
fruits and vegetables, breads and ce-
reals, and meat, fish, poultry and
alternates) as well asta variety of
foods from within each group.
With so many food choices availa-
ble, good taste and good nutrition
can -be part of every meal!
The following recipe is from
"The Lighthearted Cookbook" by
Anne Lindsay. It includes items
from all four Food groups and is a,
good source of vitamin A, vitamin
C, calcium, iron and fibre. The bo-
nus is that this dish is delicious
and easy to prepare.
Vegetable Lasagna
1 tbsp. vegetable oil 15 ml
1 small onion, chopped 1
3 cloves garlic, minced 3
I carrot, chopped 1
1 stalk celery, chopped 1
2 cups sliced mushrooms 500 ml
1 can (19 oz./540 ml)tomatoes 1
1 can (7 1/2 oz./213 ml)
tomato sauce 1
1 tsp. each dried basil and •
oregano 5 ml
salt and freshly ground pepper
3 cups small broccoli florets
750 m1
9 lasagna noodles 9
1 cup low-fat cottage cheese
250 ml
3 cups shredded low-fat mozzarella
cheese 750 ml
1/3 cup grated Parmesan cheese
75 ml

In large saucepan, heat oil over
medium heat; add onion and cook
until tender. Stir in garlic, carrot,
celery and mushrooms; cook, stir-
ring often, for 5 minutes.
Add tomatoes, breaking up with
fork. Stir in tomato sauce, basil,
oregano; season with salt and pep-
per to taste. Simmer, uncovered,
for 10 minutes or until thickened
slightly. Let cool; stir in broccoli.
In large, pot of boiling water,
cook noodles until al dente (tender
but firm); drain and rinse under cold
water.
In lightly greased 13x9 inch (3.5
L) baking dish, arrange 3 noodles
evenly over bottom. Spread with
one-half of the vegetable mixture
then .half of the cottage cheese.
Sprinkle with 1/3 of the mozzarella
cheese. Repeat layers once. Arrange
remaining noodles over top;
sprinkle with remaining mozzarella
and Parmesan cheese. Bake in 350
