Lunch box can be start of nutrition education
Consider this school lunch -
box: a vacuum bottle of
Vichyssoise soup, a few
pieces of crispy chicken; two
little plastic containers of
coleslaw and fruit salad; and
a buttered,. crusty roll.
Adult's view of this lunch:
nourishing, appetizing,
satisfying.
Schooler's view of the
same lunch: dumb.
Why? First of all, no one
would be caught dead
chewing on a chicken leg in
the cafeteria. Who has the
time for all that anyway, on
a thirty -minute lunch in-
cluding two locker stops?
Besides, this lunch is sissy -
chitdren's attitudes to lunch
are different from adults.
Lunch is like the school
uniform; it ha's to look right.
A good lunch should
contain something from each
of the four main food groups:
a protein food (probably the
sandwich filling), bread (the
sandwich again), fruit or
vegetable (ideally both), and
milk.
The wrapping around the
sandwich filling doesn't
always have to be "white
bread. Use whole wheat
rolls, sesame bans, sub-
arines ba els muffi
m g ns,
crackers, and a variety of
breads, rye, pumpernickel,
malt, cheese, cracked wheat
and oatmeal. Combine two
kinds of bread in one sand-
wich.
Here are a few examples
of "balanced" lunches: -
double-decker sandwich with
checken and egg salad on
round malt loaf; celery
sticks and cherry tomatoes;
granola bars; apple; milk.
- bagel with cream cheese,
Personals sliced beef or ham; green
-r sticks grapes oat -
makes these possible: soup, casseroles, hot macaroni
hot chocolate, stews and and cheese. chilled fruit,
