Peals of laughter could be heard in
the Ailsa Craig United Church Sun-
day School room when the United
Church Women met for the Febru-
ary fun meeting.
• With a lot of help from Edith Yeo
everyone had fun trying to decorate
a small cakc. At the end of the ses-
sion .there were many interesting
creations.
U.C.W. members from Brinsley
and Carlisle were guests at this
meeting. The theme for the worship
service conducted by Mary Suther-
land was Love.

gave a prayer and read two suitable
poems. Jean Maguire read an article
which enlarged on the "Love"
theme.
Vcrlyn Ceinpbell spoke about the
Olympics with the president, Donna
Cox, presiding plans were made for
delivering Valentine followers to
the sick and shut-in. It was decided
to have a roast beef dinner in
March.
To close the meeting Yvette Mac -
'Gregor and her committee served
cake and ice cream. The next
U.C.W. meeting will be held March

We hear a lot these days about in-
creasing the fibre in our diet. But
what is fibre, and how do we go
about increasing it in our diets.
Dietary fibre is the part of plant
foods that man cannot digest. It is
not found in any animal foods. Die-
tary fibre can be divided into two
groups: soluble and insoluble fi-
bres.
Soluble fibres dissolve in water
and arc found in significant propor-
tions in beans, oats and some fruits
and vegetables. Research suggests
that these fibres niay play a role in•
lowering blood cholesterol levels
by increasing its elimination in the
stools. Soluble fibres have also
been shown to slow the digestion
of carbohydrates and the. entry of
sugar into the bloodstream. This
property is of special interest in the
management of diabetes.
Foods such as wheat bran, whole
grains, and some vegetables contain
predominantly insoluble fibres.
These fibres. have. the ability to re-
tain water; increase stool size and
therefore promote regularity. Recent
research also suggests that a diet
high in fibre may help prevent or
treat some diseases of the colon.
North Americans cat less fibre to-
day than they did a century ago. The
removal of fibre from the diet may
be one reason why there is a higher -
caloric intake, and why excess
weight is a problem in our society..
Fibrc in the diet creates a feeling of
fullness in the stomach, which may
cut down on the amount of food
eaten.
The result? Higher fibre and fewer
'calories arc consumed. A good com-
parison is apple juicc versus apples.
One glass of apple juice contains
the same calories as two apples, but
the latter contains much more fibre,
and helps fill you'up more.
The question of how much fibre
we need is not easily answered, but
there is agreement that thost people
need more than they are currently
getting. Since the various types of
fibre are not found in just one type
of food, the best recommendation is

• increase fibre in your diet gradu-
ally to avoid discomfort and excess
intestinal gas
• keep some cansof cooked
beans on hand. Toss into salads,
spaghetti sauce or casseroles.
• wheat. bran is not the only
source of dietary fibre. Oat bran
can also be used toadd fibre to ce-
real, pancakes or casseroles.
• have a whole grain cereal for
breakfast every day
• choose whole grain breads and
muffins •
• . incorporate whole wheat flour
in your baking
• • have an apple or an orange in-
stead of juice
• leave the skin on potatoes.
Simply scrub them well- before
cooking
• mix bran into chili, thick
soups, cooked vegetables, sloppy
jocs, sandwich spreads, ground
meat mixtures, and coating prepar-
ations for chicken and fish
