Artist creates with plants
in her rural area kitchen
Leda Alcalister. RR 2 Rayfield. is
an artist who creates with clay and
brush in her studio. and %vitt) plants
in her kitchen.
"Whoever sits at my table must
have a sense of adventure-, she
warns with a misc•hievious smile.
Before meals this intrepid c•hel
heads for the vegetables, flowers.
shrubs and herbs growing in prolific
profusion everywhere on the grounds
and in the woods around her rural
home.
The flowers and leaves of the
nasturtium are part of every summer.
salad. Depending on the season. a
knowledgeable eye and discerning
palate may detect petals of sweet
clover. nippy marigold or nutmeggy
carnations, chive blossoms, ginger
root, the blue borage or the pink
rugosa rose adding a subtle rainbow
to the more orthodox greens.
Dressings are a blend of oil, lemon
juice and homemade vinegar. 'Tar-
ragon is a favourite. blit Leda may
reach instead for mint. burgan of or
dill.
Food is salted with a condiment of
dried and ground herbs mixed with
lesion peel. tine batch may contain
thyme. white and black pepper and a
little chili powder. Rosemary. sage or
dill may predominate next time. •
Tea is brewed from a lemon balm
base plus a combination of one of the
many mint varieties - peppermint,
spearmint. citrus. ginger. apple,
-pineapple or the wild arvensis found
near the Rayfield River. Forsythia
blossoms release rut tin to retard the
aging process, and coreopsis is a caf-

Leda's pet plants are the day lily
and the common rugosa rose. She
uses the lily's first spring shoots like
asparagus, but cautions they are
slightly laxative. The dried buds are
a calorie -free thickener for soups,
fresh buds and flowers go into salads,
and the roots are cooked like
Jerusalem artichokes.
Rugosa rose hips were a major
source of Vitamin C in England dur-
ing the last war. The ascorbic acid is
extracted by chopping them up, boil-
ing in water, then steeping in a crock
for 24 hours. The clear liquid rising to
the top is taken by the teaspoonful.
The pulp also makes rose hip butter,
the petals produce a delicate jelly,
and the seeds are brewed for tea.
Leda was introduced to the wonder-
ful world of plants -by her European
father, who took his little daughter on
mushroom -gathering and herb -
collecting expeditions. She defines a
herb as any.plant with uses other than
visual appeal. These include culinary,
medicinal, cosmetic, fabric dying,
and repelling insects.
