tifically how different carbohydrates
(sugars and starches) affect the body.

have a healthy one.

may be a sign of heat exhaustion and
that means the body's cooling system

A more serious effect of too much
sunshine is heat stroke. if the body"
temperature rises. with accompam -
ing headache. nausea. and/or
vomiting. it's time to call a doctor.
Meanwhile try to get the body
temperature down with cold baths or
by wrapping in cold towels.
People are sometimes uneasy
about eating chicken salad, potato
salad and similar dishes at sunnier
picnics because they've heard that
foods made with mayonnaise are the
ones most likely to cause food poison-
ing. However. scientists have shown
that adding mayonnaise toa food does
not make it more dangerous. Foods
containing mayonnaise may actually
he slighlh•'safer because the acid in
the mayonnaise slows the growth of
the bacteria that cause food poison-
ing. Mixed foods like chicken salad.
probably got their bad reputation
simply because they undergo a lot oI
handling during preparation. and this
can contaminate thein with bacteria.
Also, bacteria will multiply rapidly in
non-acid foods such as chicken. meat.
milk. and eggs when storage condi-
tions are poor.
While the "mayonnaise theory" has
been shown to be a myth. tood poison-
ing itself is no myth and no joke - ask
anyone who's experienced it. To pre-
vent bacterial food poisoning. the
basic rule is to keep hot foods hot and
cold foods cold. It you're carrying
hamburgers or'other raw meat for a
cookout, they should be stored in a
cooler, but kept separately from other
foods. Uncooked meats contain
relatively large numbers of bacteria.
some of which are harmful: Cooking
will kill these bacteria. making the
• meat safe to eat. However. these
bacteria can cause problems if they
have contaminated other foods such
as salads which don't receive further
cooking before being eaten.

diet is introduced in Chapter seven.
The second part of the book, called the
gourmet section, contains recipes for
everything from appetizers. dips and
spreads through. soups, salads and
dressings to vegetables. main dishes
and desserts. candies, preserves and
beverages.
A final chapter gives instructions on
making yoghurt and cottage cheese.
as well as baby formula to be used for
short periods of lime for babies with
severe diarrhea.
The hook ends with an excellent
glossary and a detailed appendix
which lists the types of cheese allow-
ed and prohibited, the amount of
sucrose added to many' common
foods, and sources of vitamin
supplements.
A sample menu shows how the
Specific Carbohydrate Menu can be
implemented. The day 'could begin
with a baked apple sweetened with
honey, scrambled • eggs, and a
homemade nut muffin with butter and
homemade jam washed down with
weak tea. coffee, grape juice or apple
cider.
Lunch could be a tuna fish salad
made with homemade mayonnaise
garnished with olives and dill' pickle
on a bed of lettuce, slices of cheddar
cheese and homemade pumpkin pie
with a nut crust and a refreshing pina
colada drink.
Dinner could consist of homemade
spaghetti sauce made with ground
beef. onions. garlic, herbs. and
tomato juice served on boiled beans
or spaghetti squash. accompanied by
cabbage salad with homemade
mayonniase or dressing, peas and
carrots with butter, and fresh fruit or
cheesecake. The recipes for the bak-
ed apples, muffins, jam, mayonnaise
and vinaigrette dressings, pumpkin
pie and crust, spaghetti sauce, pina
colada and cheesecake are all in the
gourmet section.
Elaine is already planning another
book which will give specific case
histories of many people who have
been helped by the special diet
