Canadian spuds have appeal
Market research shows that
potatoes do not have a shining image,
in the eyes of Canadian consumers.
Promoters have worked hard to
change that image. What more can be
done?
Consumers hold the fate of the
potato in their hands. They decide a
product's popularity. Influenced by
the media, consumers decide the
highs and tows of a product cycler
Potatoes are no exception, even

Hurondale girls cook
The Hurondale 11 club met for its
second meeting at Karen Ether-
ington's where we discussed prepar-
ing and cooking meals.
First the 4-11 pledge was said and
then we went on to roll call which ask-
ed "what our favourite eaten away
from home meal was?"
Then we went on to cooking and
learning how to measure things. We
divided into three groups where each
group made part of a meal. Some of

cookies.

though they are already considered a
staple food.
Is it because potatoes are inexpen-
sive that we have forsaken them to
• pursue a high standard of living?
Potatoes are fashionable, and can
even be royal. Do sophisticated new
.foods and new cooking techniques
make us think that there are only two
or three ways to serve potatoes? The
versatility of the potato is only limited
by our ability to rediscover it. We
have only to glance at menus from
great restaurants to prove it.
Could it be that our lifestyle,
oriented towards nutrition, suggests
we should ignore potatoes'? We should
not, because potatoes are rich in
nutrients and low in energy. Do we
think that potatoes do not fit into the
time we have allowed for food
preparation? When we know the
range of potato products and varieties
available, as well as several tricks to
speed preparation, this reasoning
does not stand up to scrutiny.
Consumers today want quality, con-
venience, nutritive value, practicali-
ty and good ,economies from a food.
Potatoes have all these, so why
choose substitutes? These few reflec--
tions favor a return to the potato in
our diets.
February and March are
designated as potato promotion
months. The Canadian llorticulture
Council, through the Fresh for
Flavour Foundation, has launched a
promotion - Canadian Potatoes Have
Appeal. Isn't it tune to discover the
possibilities for potatoes that will fit
withour lifestyle for 1990? Let's think
about it: -
