Need quick action when freezer quits When the freezer stops working. act quickly, advise food and nutrition specialists with the Ontario ministry of agriculture and food. First ensure the door or lid is tightly closed to retain the cold. Then look for the source of trouble. Should the power fail. find out how long the service will be in- terrupted. If the motor stops while the cord is plugged in and no fuses have blown, find out how quickly repairs can be made. You may need to borrow freezer space from friends or a commer- cial establishment. If the appliance stops run- ning. food will stay frozen for approximately 48 hours if the freezer is full and the door stays shut. A half full freezer will keep food frozen about 24 hours. Covering the unit with blankets provides extra insulation but if the power has failed, leave the air vents free, in case the electricity returns earlier than expected. Some partially or com- pletely thawed foods can be safely refrozen depending on the type of food and how cold it is. With others, it could be dangerous. Freezing doesn't destroy all micro- organisms. It just stops them from growing until the temperature climbs over 4 degrees C (40 degrees F). Because the freezing process changes the texture of food. thawed items can spoil more quickly than fresh ones. As a rule of thumb. if the package still contains ice crystals and there's no sign of spoilage, it's safeto refreeze but quality will be affected. If foods are thawed com- pletely and held at refrigerator temperatures for no longer than 24 hours, vacuum packaged raw meats, poultry and vegetables can oe refrozen if they're first immedately cooked to the well-done stage. After cooking remove poultry meat from the bones. Unless fish, shellfish, casseroles, T.V. dinners, vacumm packed, smoked, cured or cooled meats and boil-in=a-bag meals are cooked and eaten im- mediately, they should be thrown out. Digester, Public Health Nur sing Huron County has been experiencing an outbreak of head lice amongst children during the summer months. Head lice infection - also known as pediculosis - is ,exclusively a human problem and still quite common. The head louse lives on the Broccoli time here • Early September marks the beginning of Ontario's peak season for broccoli. Marketing specialists at the Ontario Ministry of Agriculture and Food inform us that fresh Ontario broc- coli will be available until the middle of October. Choose broccoli with a bright green color and fresh appearance. The stalks should be tender, yet firm, and the flowers- should be tightly compact. Watch for signs of over -maturity, such as wilted leaves and yellow - speckled buds. To help retain broccoli's fresh flavor, cover with a plastic bag and place it in the refrigerator crisper. For the freshest flavor, plan to use it within three days. To prepare a broccoli bunch for cooking. wash it quickly in cold water. then trim the course leaves and the woody stem. Cut the broccoli lengthwise. and split the stalks part way to allow for more even cooking. For smaller pieces. you may wish to use just the broccoli flowerettes. In; this case, chop the stalks separately and add them to soups, stews and casseroles. Broccoli is a tender vegetable. which makes quick cooking important. Cook it just to the tender - crisp stage for the best flavor and color. Ontario broccoli is an ideal vegetable to steam. stir -fry and boil quickly. Serve it piping hot with a drizzle of butter. a sprinkle of cheese or a creamy sauce. Ontario broccoli is also delicious eaten raw. Serve crunchy broccoli flowerettes with a savory dip for a scrumptious change of pace.. The adult female head louse lays eggs (called nits)which are whitish, oval shaped and 'tiny. These nits cling to the hair shaft; and unlike dandruff, they keep on clinging and cannot be shaken off; after about a week the nits hatch into new lice. They puncture the skin to obtain food; this causes itching and scratching which can cause infection. Head lice are usually transmitted from one person to another by direct contact with the hair. This can happen if you use an infected person's brush or comb. Towels, sheets, blankets, pillows and clothing especially hats, can all transfer lice from one head to another. Parents should not get indignant if their child becomes infected, the problem has nothing to do with dirt or with standards of hygiene at home. Head lice are more of an irritation or an aggravation than an actual health hazard. Head lice do not carry disease. However, if one person in a family or school has pediculosis, chances are others will be affected too. When the children return to school in September, each child's head will be examined and parents notified of children who have pediculosis. Because of the way lice multiply and spread, it is important to take immediate action to treat the condition. To rid the head of lice and nits the following should be done: 1. Soak the head in pure vinegar for ten minutes. This is to soften the shell of the nit. 2. Apply Para Lice (spray) or Kwellada (shampoo) solution which can be bought at the drugstore. Follow the directions on the bottle. Use a fine steel tooth comb, separating each strand of hair and comb very carefully to remove all nits. The combing of the hair must be done strand by strand until the entire head is free from nits. It is much easier to comb hair and remove nits when the head is wet. The steel comb may be borrowed from your local health unit office. 3. All clothing should be washed in very hot water; this especially applies to headgear, scarves and bed linen. If washing is not possible, then dry cleaning is an alternative or spraying with Para Lice spray.
