tomatoes with good color. If

ed. refrigerate them un-
covered and use within 2 to 3
days. If the tomatoes are not
ripe, allow them to rifen at
room temperature, way
from direct sunlight, before
refrigerating them. To
serve, bring ripe tomatoes
to room temperature.

Starter. In this recipe the
tomatoes are cut in thick
slices then marinated in a
zippy dressing for a few
hours to chill and blend the
flavors - a delicious slPt to
a meal on any warm
summer evening.
Zesty Tomato Starter.
4 fresh tomatoes. each cut
into 3 thick slices
1 medium onion, thinly slic-
ed andseparated into rings
2/3 cup vegetable oil
4 tablespoons red wine
vinegar
1 tablespoon horseradish
1 tablespoon fresh pars1Ey.
snipped
1 teaspoon thyme leaves
'12 teaspoon salt
teaspoon pepper
lettuce leaves
Place tomato slices in a
shallow dish (8 x 8 x 2 in.
overlapping, if necessary.
Top with onion rings. -Blend
together remaining in-
gredients in a blender or a
jar with a tightfitting lid.
Pour . over tomatoes and
onions„ Cover and
refrigerate 2 to 3 hours.
Remove tomatoes and
onions• from dish with a
slottedyspo`on and place on
lettuce leaves. Serve with
dressing spooned. over top-
Makes 4 to 6 servings.
