succulent Ontario ham. To
help make your special
dinner a success, marketing
specialists at the Ontario
Ministry of Agriculture and
Food offer these suggestions
for buying Ontario ham.
Check the label to be sure
the meat is from the hind leg
of a pig. There are several
different cuts of ham
available from the butt or
shank portions of the leg.
You can purchase it as
whole, half or quarter por-
tions, and even steaks.
Choose from bone -in, par-
tially boned or boneless
hams. depending upon the
need. Ham is packaged with
the skin on, partially skinned
or skinless, and may be par-
tially or fully cooked. It may
be rolled, shaped, formed or
canned.
For boneless hams, allow
125 to150g(tlatol/3lb) per
serving, and for bone -in
hams allow 150 to 200 g (1/3
to 1/2 Ib 1. Bone -in hams
range in weight from 8 to 22
lb. A heavier ham yields
more meat in proportion to
bone, so it may be a better
buy. Remember to boil the
bone to make hearty soup
stock.

(160 degrees F). Fully cook:
ed hams may be heated to an
internal temperature of 60
degrees C (140 degrees F).

with plow equipment for plowing snow at the Grand
Bend patrol for the 1981.82 winter season.
