HURON -MIDDLESEX Lots of mushrooms According to marketing specialists at the Ontario Ministry of Agriculture and Food, Ontario is the largest mushroom producer in Canada. About 80 per cent of the mushrooms grown in Ontario are sold fresh. The remaining mushrooms are either canned, frozen or freeze-dried. The heaviest con- centration of mushroom farms is in the Golden Horseshoe area, including the regions of Peel, York and Halton and Hamilton - Wentworth. And some farms are located near Leamington, Simcoe,Ottawa and east of Toronto. Ontario mushrooms are grown year-round in sterilized compost beds in mushroom houses. Tem- perature, humidity, ven- tilation and the amount of darkness must be carefully controlled to promote ideal growing conditions. Once mushrooms are planted, it take several weeks before they're ready for market. However, each crop lasts about three months and must be picked daily. New crops are con= stantly being planted to ensure a fresh supply of mushrooms throughout the year. When shopping for fresh mushrooms, look for firm, tightly closed gills. The caps should be smooth, creamy - white to light brown and unblemished. At home, store them unwashed in a bowl covered with a damp cloth, or in a paper bag in the refrigerator crisper. For best quality, use mushrooms within a week. Farmer Continued from page 15 producing 390 eggs per day. About the increased costs of production, Harvey Hodgins said, "Last year's good prices for white beans certainly helped compensate for any losses in the milk business. One aspect of farming helps the other. Another year that situation could be reversed." AT COLOURED BEAN MEETING — Cook's Division of Chalet, Wednesday.
