Clifford Pepper, RR 1, Dashwood has been in- terested in chickens since he received 25 chicks from the provincial government as a school project some 54 years ago. After a lapse of a few years during his teen-age life. Pepper started raising and showing poultry in about 1935 and has been at it ever since. He is now known as one of the top judges in the province, receiving his judg- ing certificate from the On- tario Poultry Association in 1972 and from similar group in the United States four years ago. Pepper has been a regular judge at the Canadian National Exhibition and the Royal Winter Fair since 1972 and has also been to fairs as far away as Perth and Odessa in addition to his re- cent jaunt to the Maritimes. He assisted with a recent poultry judge's seminar at the University of Guelph at which time five new judges were approved. Asked about the judging end of the poultry business, Pepper commented. "I love to judge. Our poultry bible is Standard Perfections for domesticated fowl and water fowl. 1 have most,of these regulations in my head". While judging takes up a lot of his time. Pepper still manages to exhibit at a number of fairs and shows in Western Ontario. For Cliff Pepper the show- ing season usually starts on the first Saturday in June with the Clinton spring fair. Pepper helped organize the poultry divisions for the Clinton fair. Then comes a show in Guelph on the first Saturday in July followed by the Zurich fair and the busy time is underway. A show for the 40 members of the Huron Poultry. Pigeon and Pet Stock Association is set again this year for the se- cond Sunday in July on the Pepper farm at Lot 11, Concession 16 of Hay township. The Hay township enthusiast hatches his own chicks. He added. "I haven't bought a baby chick for more than 20 years." He has cut his own flocks a bit. This year he will probably be hatching only about 180 birds compared to some 300 when he was at his peak. He has the only purebred Red Dorkings in Canada, bringing in a few eggs from the United States. Most chicks are hatched in February and March.. Pepper says they develop better and get stronger when hatched during those two months. Preparation for a show starts about four days ahead with washing of the birds, especially the white ones. Pepper prefers one day shows saying. "I don't like any show where I have to leave my birds for a day or two. It's not good for them". Asked about the most pop- ular breeds. Pepper said, "I guess I would say the Black Australorps and the good old Rock breeds and the first show bird. the white Leghorn is still around." Pepper receives valuable assistance from his wife Laura not only in helping with raising the birds but in clerking at shows. Cliff Pepper is the poultry director for the Exeter Agricultural Society and was president of the Ontario Poultry Association for three years.
