-Mostly everyone in town has been
wondering why the town time piece
has been off duty for the past couple
of weeks, and we have been of the
sante mind. It was our intention to
ask some one to lend us a ladder and a
bunch of keys and we would risk our
fives by going up in the tower and
giving the hands a push. It seems.
however, that the recent rains washed
into the works and so swelled the
woodwork that the machinery can't
work. In the winter the heat froth
the furnace keeps the clock warm, but
what is really needed are glass faces
to protect the hands from the ele-
ments.
-A representative of the Times
was accorded the privilege ofgoing
through the new plant of the Exe-
ter Evaporator Company of Station
Street last Frid:ty tend found bu3i-
1103i ill Dili sw•ing with about twenty
hands engaged. The ulcic building
erected by the Gibb Company is 72
feet long by 38 feet wide being a
two .storey ;structure, On the south
aide is a large !addition to the build-
ing for the storing of apples, while
a small building has been erected a
short distance from the main build-
ing for the use of the book-keeper
and for the weighing of apples when
brought to the evaporator. The
applca are =mewed out in. bush=el
baskets and placed in receptacles be-
side the maohine operators for peel-
ing. These machines besides peeling
take out the cores and throw the
apples into a large box, toaside
which other operators sit to pare
out the rotten parts. The pared
apples aro thrown into wooden draw-
ers and then placed in an elevator
running to the lop floor underneath
which i3 burning sulphur, the fumes
of whioh bleach the apples until
every part of them is white. The
bleached apples are received by an-
other employee on the top floor and
put in a machine wshied", slide }ham
after whioli they ors' ptit in a Targe
room over the kilns aa) d altott"\to
dry for about twenty'-, O. I, i`bt><rs
They are thou ready for packing gnd
shipment. The peeling a,u4tCOPe3 are
also utilized. These parts of the, ap•
plea are gathered up and alio dried
and are s=lipped away to be convert-
ed into jollies and marmalades. Lur-
ia; the whole prosesa there is pot a
portion of the apples lost. Even the
apples that tool: to be w•ot'thlaas
are placed in a separate box, chop-
ped up fine and dried. These are used
in the making of champagnes and
other hi;h priced wines, so that one
can feel when indulging in Porntuery
Sec. that he i3 partaking of the caat
off of the apples. however it might
be said that tater the apples go
throu;h the different processes they
look somewhat different than when
piled up in heaps in the 'storage
sheds. The output of the Exciter
factory is sent 'to Parkhill and oth-
