New restaurant opens up in Seaforth

Nathan Smith is the new-
est entrepreneur to join a
long list of successful busi-
nesses on the main drag of
town.
Bringing to the table dec-
ades of culinary experience,
the chef from Bayfield is
jumping into the most com-
fortable world he under-
stands and that's the restau-
rant business.
First starting his career as
a dishwasher at the age of 14,
Smith expanded his desire
by enrolling in a culinary
secondary school program
in Niagara Falls.
Following graduation,
Smith's passion led him to
several establishments in
British Columbia. He then
landed in the 1 luron County
area and manned the
kitchen at the Red
Pump Inn as the sous -chef.
Eventually, after years in the
cooking industry, Smith
subsequently started
employment as head chef,
assuming the role at the
Black Dog Village Pub &
Bistro in Bayfield.
After working in those
roles over the past several
years, Smith decided he
wanted to take on a cooking
venture of his own.
Midtown Bistro is what he
came up with.
"I bounced a lot of names
back and forth, this one kind
of stuck because the location
of where it is.... in the mid-
town," Smith said March .1 by
phone.
"Ihe restaurant is being run
out of the vacant space
where Johnny's Subs and
Sandwiches once operated
and Smith said he is aiming
for a healthier eatery.
'Ihe new food shop is con-
centrating on a local feel -
Smith said the Midtown Bis-
tro is buying fresh produce
and other ingredients from
establishments in a close
proximity to Seaforth.
The menu is primarily
compiled of "homemade
soups, fresh healthy salads,
sandwiches, breakfast,
bagels, scones and
pastries."
Smith added that he's not
necessarily diving into the
dinner aspect Vet.
"We are going to see what
the community of Seaforth
wants and build off that,"
stated Snaith. "Essentially it's
not what I want, it's what the
community wants."
For the time being, Srnith
is working solo, however he
told the Expositor that he'd
be looking for two additions
and one of those people to
fill in as a manager.
Currently he is renovating
the space and expects to be
open by April 1.
"I know enough people in
Seaforth that are looking for
something different, so this
opportunity presented itself
at the perfect time," Smith
said.

Online survey
ends March 10
The County of Huron is
working together with local
Internet service providers to
expand access to high-
speed broadband in our
region.
Residents are asked to
participate in a brief online
survey and conduct Internet
speed tests from their homes
and businesses to provide
information about their
Internet service. This infor-
mation will be used to sup-
port an application to
the Connect to Innovate pro-
gram, which is a Govern-
ment of Canada fund dedi-
cated to expanding
broadband in rural and
remote areas. Participation
in this survey is voluntary,
but the information is vital to
the success of'future funding
applications.

On Tuesday, March 21st, 2017 at 7:30 pm. Huron East Council will consider
a by-law to stop -up, dose and sell part of the Silver Creek Road Allowance
as indicated on the attached map. Any person wishing to be heard on this
matter who claims that his or her land will be prejudicially affected by the
said by-law will be heard.

Under Council's direc-
tion, County staff has been
working with local Internet
service providers to develop
made -in -Huron solutions to
connect our residents to
high-speed broadband ser-
vice. This work has already
yielded progress with the
announcement on January
23rd, 2017 of a successful
application to the Small
Communities Fund for a
project that will connect or
improve the connection of
nearly a thousand homes,
several small businesses
and one school in Huron
County.
