Lager House caters to people with Celiac disease
with menuselections, kitchen preparation

While Heather Ryan works as the
manager of the Lager House in
Seaforth, having celiac disease
always used to make it impossible
for her to eat there.
Allergic to wheat, rye, barley,
oats, gluten and anything derived
from those grains, she and all her
family members who share the con-
dition didn't eat out much since
restaurant meals usually resulted
in significant pain from the diges-
tive difficulties caused by celiac dis-
ease.
But, when the Lager House's head
chef James Ellis noticed Ryan's con-
cerns, he started to make the neces-
sary changes in his kitchen to allow
Ryan and her family to eat there.
"James understands what we can
and cannot eat and he's modified
items on our menu for us," says
Ryan.
Recently, the Lager House decided
to change their menu to identify
which selections are safe for people
with celiac to order.
For celiac sufferers, the ingredi-
ents of the meal have to be gluten-
free. But, the method of preparation
is equally important since using the
same utensils, grill and fryer for
meals that contain gluten can be
enough to make them sick.

"He's taken out all the wheat
products and he's dedicated one of
the fryers to celiac meals. As well,
everything gets cleaned off before
the celiac meals are cooked," says
Ryan.
Ellis says he's had to find differ-
ent kinds of sauces that are gluten
and MSG -free as well in order to
meet the needs of the customers
with celiac disease.
He's managed to find gluten-free
burgers and find salad dressings
without preservatives.

find but they can get pricey. You
don't want to have to charge $10 for
a bowl of soup because the ingredi-
ents were so expensive," he says.
Ellis says that since he suffers
from seafood allergies himself, he
was happy to make the necessary
changes for Ryan and her family.
"Celiac seems to be a growing dis-
ease in young people today - there
are 20 people in her family with it,"
says Ellis.
"I try to keep everything in the
kitchen sanitary enough that no one
gets contaminated. Cleaning the
grill is crucial since people will get
pain even if they ask for a special
steak if it's cooked on the same grill
with anything else," he says.
Ellis and Ryan say the Lager
House is starting to get more cus-
tomers who suffer from celiac dis-
ease now that the special menu
exists.
"People are thrilled because it's
extremely tough to find a place to
eat out when you have celiac dis-
ease. There are a few restaurants in
Stratford and London but they tend
to be pretty expensive," she says.
Huron County Health Unit nutri-
tionist Nancy Fisher says it's rare to
find a restaurant in Huron County
catering to celiac sufferers.
"It is difficult to eat outside the
home with celiac disease - they have
to be very careful about what they
cook. This restaurant sounds fairly
unique," she says.
Seaforth woman
charged with fraud
A 22 -year-old Seaforth woman has
been charged with 15 counts of fraud
after a shopping spree in Seaforth.
Between Dec. 1 and 5, the woman
made numerous purchases at local
businesses using personal cheques
while committing fraud.
She is scheduled to appear in
Goderich court on March 3.
