Small town life brings chef Ottavio
Ruccolo and wife to Seaforth

Born in Italy and raised work-
ing in his father's restaurants
and banquet halls in Montreal,
Ottavio Ruccolo hopes to offer
good food and entertainment as
the new owner of the Queen's Inn
and Spa in Seaforth.
Caught by the beauty of the
historical building in a real
estate book, Rueolo decided to
take a drive from Toronto to
Seaforth when the Queen's was
still on the market in the spring.
"I liked the building and I saw
the traffic buzzing by and
thought that if I have good food
here, people will stop. I want to
put the place on the map," he
says.
Ruccolo has owned restaurants
and discos in Hamilton and
Toronto and says he and his wife
and two children are drawn to
the quiet and slower pace of a
small town.
"We have a family of four and
they love it here. My kids like to
go to the park," he says, adding
he hopes to rent a house in the
country for the next year where
he can grow his own spices.
As the new chef at the Queen's,
Ruccolo plans a large Italian
menu with pasta, veal chops,
chicken, shish-ka-bob, steaks
and seafood.
"We will make our own bread
and everything will be fresh.
Pasta is the main thing and
there will be good big portions -
you're going to
ask for a doggy
bag," he says.
He has gut-
ted the interior
of the main
floor and is
planning all
new walls, a
ceramic par-
quet dance
floor and four
dining rooms
decorated in a
Roman theme.
He plans a
front desk in
the main lobby,
statues and an
awning at the
front door and
an outside bar-

plans to cook
for the 120

patio will hold. As well, he plans
an outdoor dance floor on the
patio.
For entertainment, Ruccolo
wants to offer a steady stream of
musicians of all types - from rock
to dance music to country and he
plans an annual jazz festival
with musicians he knows in
Toronto.
"We'll do the jazz festival every
year until it gets bigger and big-
ger," he says.
On the second floor, Ruccolo
plans to finish eight ensuite
hotel rooms and offer spa servic-
es, such as massage, manicures
and pedicures in one of the large
rooms.
On the third floor, he plans to
finish four apartments.
"It just needs some paint, car-
pet and furniture upstairs," he
says.
Ruccolo is hoping to receive a
liquor licence in July and to open
the doors to the public Aug. 1.
"We'll do an opening night and
give everyone a taste of different
dishes," he says.
