St. Columban cookbook holds
good recipes and fond memories

Though St. Columban
Church may now be closed,
its former parishioners now
have at least one thing to
remember it by.
A cookbook, containing
about 330 recipes for
appetizers, main courses,
desserts and more, has been
printed and has been selling
extremely well.
"We had to reorder," says
Frances Malone, who came
up with the idea for the
cookbook about a year ago
when she heard rumours that
the church might be closed.
"We've actually got 100
copies ordered because
we're out of print already.
' We've got orders that we
can't fill."
Malone says 275 copies
were initially printed, the
bulk of which were sold the
day the church closed.
The book begins with a
short history of the church,
then recipes for appetizers
and beverages, followed by
sections on salads, soups
and sauces; main.dishes and
casseroles; pies, pastry and
desserts; cakes cookies and
candy.
These sections precede
another called "This and
That," which contains
recipes for dill pickles, chili
sauces and canned beets,
among other things. The
book ends with "This I
Remember," a list of
memories from years gone
by.

grandmothers and even
great-grandmothers.
Titled Good Memories,
Good Cooks, the book was
designed by London-based
graphic designer Gary J.
Cronin, who Malone says
was baptized at St.
Columban.
"This is a work of art,"
Malone says. "Really, it is."
"I can't really emphasize
enough — the book wouldn't
be as beautiful as it was if it
wasn't for Gary Cronin," she
added later.
Malone says word of
mouth has been the key to
the book's sales. "What's
been happening to us,
people have got one book
and they say, 'Oh, I'd like
one for grandma,' you know,
and other people have said,
'1 hear that's a nice book, 1
think we would like one,"'
she explains.
She says she isn't sure if
they will sell the extra 100
books that have been
printed, but says that if there
is a demand for more, the
demand will be met.
Still, the success of the
book sales thus far has been
a great surprise to Malone
thus far. "I knew Gary
would have a good book, but
I never thought it would sell
this well," she says. "I'm
just proud and thrilled. It's
wonderful. It's a book that
you'll always keep because
it has just what we say, good
memories."
Another keepsake by
which St. Columban will be
remembered is a video being
prepared by Dublin -area
photographer Angela Smith.
Though Smith is the one
pulling things together, the
project is being spearheaded
by former church member
Ricki Vansteelandt and
Karen Menheere. The video
will contain footage of the
final mass held at St.
Columban, and also a slide
show of pictures of the
church.
It is hoped that the video
will be ready by fall, and
proceeds will go toward the
cost of production. Any
money left over will likely
go to Seaforth's food bank,
Vansteelandt says.

Huron East has no complaints about
Ontario Municipal Partnership funding

While Huron East is
getting half of the expected
increase in municipal funding
expected from the province
in 2005, no one is
complaining.
"We are way above
everyone else," said Deputy -
Clerk Brad Knight, pointing
to a chart that shows Huron
East's funding under the new
Ontario Municipal
Partnership Fund (OMPF),
compared to that of the rest
of Huron County.
"It's hard to complain
when we're $1.2 million over
the next lower tier
municipality. Council feels
the new funding formula is
fair to us," said Knight in a
phone interview after last
Tuesday's council meeting.
In 2005, Huron East is
receiving $3.1 million in
OMPF funding, compared to
$1.9 million in South Huron,
$1.4 million in Central Huron
and a range of $1.27 to $1.06
million for the rest of Huron
County's municipalities.
Knight said the difference
in funding can be attributed
to the three rural
municipalities of Grey,
McKillop and Tuckersmith
that joined Seaforth and
Brussels to form Huron East.
"It comes down to the
farmland funding. Huron
East has the largest
percentage of farmland
assessment in the county," he
said, adding that Grey and
McKillop received the most
funding in the county as well
under the former Community
Reinvestment Funding (CRF)
formula that OMPF replaced.
Huron East was expecting
an increase of $874,000
under the new funding but
will also receive $452,000
next year because of a phase-
in adjustment cap.
A tax rate comparison of
Huron County's
municipalities also shows
that four of Huron East's five
wards have the top four
lowest taxes in the county.
And, Seaforth has jumped
from second highest to fifth
highest taxes in Huron
County since amalgamation,
a benefit Knight attributes to
its joining up with rural
municipalities.
Brussels has made the
biggest gain jumping from
19th lowest taxes to fourth.
While council decided to
put most of its extra funding
for 2005 into reserves and the
purchase of a new fire truck
and road grader, Knight said
council will have some
decisions to make next year
about how to spend its extra
$509,436.
"You could take it off the
tax levy or you could put it
towards roads, bridges.
libraries and arenas. It's a
great position for council to
be in," he said.
