Chicken and Egg Club hosts its fifth and sixth meetings
Meeting 5 of the Great
Chicken and Egg Club was
held on March 7 at Pat
Saundercock's house.
The club gathered in the
kitchen to make Wild West
Wings and Deli Chicken
Salad.
After the club had cleaned
up their mess and the food
was cooking the meeting
was officially opened. Since
a number of members could
not attend due to inclement
weather, some of the
executive jobs needed to be
switched around. President
Louise Lobb was absent, so
Vice President Jessie
Leeming led the club in the
4-H pledge.
The minutes of the last
meeting were read by the
Press Reporter since
Secretary Michelle Lobb
was also absent. The roll
call, "give an important tip
on microwave cooking,
separating egg whites and
yolks, or beating egg
whites," was answered.
Not microwaving foods in
metal containers, letting the
food stand for a minute after
it is taken out of the
microwave because it will
still be cooking and using an
electric mixer to beat egg
whites instead of a whisk
were some suggested tips.
The leaders also offered
some tips of their own. Bev
suggested that beating egg
whites in a plastic bowl
might be difficult because if
there was oil still in the
plastic from other uses, the
egg whites won't whip
properly.
The club then discussed
Chicken and 1:44; Club
how it is best to defrost
chicken. When it is
defrosted in the fridge it
should be on a lower shelf
to prevent it from dripping
on other foods, especially
raw foods. Another tip was
to defrost it in the
microwave for small
intervals of time. Some
microwaves also have a
defrost button which is an
asset.
The club discussed the
reasons why caution should
be taken when heating an
egg in the microwave. The
main reason was because it
would explode if it wasn't
pierced with a fork first.
Before the food was taste
tested, the leaders made
some announcements. The
first was that there would be
no meeting during the
March Break.
The other announcement
was to bring an egg carton,
flower or grass seeds, two
hard boiled eggs and any
crayons or markers, as the
club would be making crafts
at the next meeting.
Everyone made their way
out to the kitchen to try the
food. It was a big hit.

Meeting six of the Great
Chicken and Egg Club was
held on March 21 at Pat
Saundercock's house. The
meeting opened when
President, Louise Lobb led
the club in the 4-H pledge.
The roll call, "suggest a
use for the `leftovers' from
eggs - egg shells and egg
cartons," was answered. The
most common suggested
uses were crafts and
compost. The minutes were
read and approved.
The meeting topic,
"What's Left?" was then
discussed. Some suggestions
for chicken include
sandwiches, casseroles and
salads. Some uses for
leftover yolks could be
custards, meat leaf, omelets
and sponge cakes. Uses of
the white may include angel
food cake, boiled frosting,
souffles and pie crust.
Leader Bev Broadfoot
gave the club a handout
with instructions on how to
dye eggs using natural
products. For a pink shade,
soak the egg in cranberry
juice or beet juice. For a
lavender colour, soak the
egg in grape juice. If a rich
brown colour is desired, dip •
the egg in coffee.
Next it was time for the
club to test their creativity.
The club was divided into
two groups. One group used
an egg carton and egg shells
to plant their favourite
flower or plant, while the
other group dyed and
decorated their hard boiled
eggs. Eggs were
transformed from white
eggs to blue, green, orange,
pink and multicolour eggs.
It was then time for the
parents to arrive so the club
members tidied up the
kitchen.

busy Easter weekend.
Carolyn Wilson, a
Stratford St. Michael's
teacher, was in Ottawa
Dublin
recently to receive a Prime
Minister's award for
Teaching Excellence from
Prime Minister Paul
Martin.

invited to come out and
nominate or be nominated
and to cast your vote. We

have a successful wealthy
branch.
Jack Eisler, Jack Muir, Jim
MacLeod and Al Nicholson
are the provincial cribbage
champions. They will go on
to Sudbury to
compete in the
Dominion
championship
April 22-25.
Dave Watson, Don Eaton,
Tom Barry and Jack Eisler
came fourth in the district
euchre in Galt and will go on
to Brockville for the
provincial championship on
April 9. Good luck to both
teams.
The branch is still having
food on Friday nights.

Club members learn how to judge
chinchillas at recent 4-H meeting
On March 19,
the 4-H Chinchilla
Club combined its
fourth, fifth and
sixth meetings together.
President Tanner •Merner
started the meeting off with
the 4-H pledge and the three
roll calls.
Press Reporter Jessie
Leeming read the minutes of
the last meeting because the
4-11 Chinchilla Club
Secretary Ian Murray was not
there.
We looked at the two
chinchillas that Leader Ray
brought in.
We got to judge them to
see which one was better
looking, darker and bigger.
These are the
three things we
should look for
when we are
judging chinchillas.
Leader Barb showed us
how to carefully take our
chinchilla out of its cage and
how to brush it.
Next meeting will be a
field trip on April 2.
