46. In Memoriam
JAMES: In memory of Philip
James, Sept. 9th, 1998.
The sun rises, followed by a beauti-
ful sunset.
There are rainy days. a flash of
lightning with stormy moments.
The seasons change, leaves turn.
red, winds howl. snow sparkles.
It's Spring again, tiny green sprouts,
mantle rain. -
The roses bloom, the birds sing, the
music stops and yet it echoes on in
sweet refrain.
For every joy that passes, some-
thing beautiful remains.

Although, the weather had been somewhat

beautifully from 6 p.m. on for our barbecue,
with sun andcomfortable temperatures.
Thank you to Peter Bedard, auxiliary

Women .make flavoured vinegar
The Women's -
Institute Workshop
Herbal Delights
was held on Aug.
Seaforth Women's Institute
17 in Crediton at the home of
Valorie Pooley, owner. of
Aux Fines Herbes.
The group of ladies
participating in a herb
workshop learned how to
grow and prepare herbs and
flowers for use in flavoured
vinegars and potpourri.
Flavoured vinegars are
ordinary vinegars flavoured
with spices, herbs, fruits and
flowers.
The results are
extraordinary. _
These vinegars can be
added to salad dressings,
sauces and marinades, which
are an inexpensive way to -
liven up your dishes.
Homemade gourmet -
flavoured vinegar also makes
a great gift; they're useful,
consumable, and totally
unique. Making flavoured
vinegar is about as tough as
boiling water.
A variety of herb plants
were chosen by the group to
make their own flavoured
vinegars. Leaves and sprigs
of the herbs such as lemon,
thyme, dill, tarragon and
basil were put in with the
vinegar.
White wine vinegar, cider,
red wine or rice wine vinegar
can be used. Experiment
with each type
and the herbs
you have.
The
instructions for completing
each bottle of vinegar shows
in 3-4 weeks our product is
ready to use.
The potpourri they made,
consisted of many elements
from each of five categories;
fragrant, leaves and flowers,
spices and seeds, oils,
fixatives and petals and
leaves for colour.
Each year, several
Womens Institute workshops
are offered. If you are
interested in participating in
these courses contact your
local Women's Institute
Branch. Everyone is -
welcome to attend.
