The biggest markets for
rabbit meat are in Toronto
and Montreal. Europeans
and Asians are the biggest
consumers. Those who
enjoy the delicacy don't
hesitate to pay the price.
In early March, a super
grocery store had the price
listed at $10.34/kg ($4.70
Ib). Normally rabbit is
sold by the whole carcass,
however, Brian said some-
times you can get cuts.
The couple eat a lot of
rabbit themselves, prefer-
ring it to chicken. "It isn't
as fatty as chicken," says
Brian.
Some people think rab-
bit farming is an easy way
to make a living. Not so,
says Brian. "Eighteen
months is the average for
people to be in and out of
rabbits. It's not an easy
buck. Quality is very
important."
There is no marketing
board for rabbits: "You
have to find your own
market," Brian said, "but
it's interesting getting to
know the people who buy
your rabbits."
An offshoot of their
main business is the pro-
duction of rabbit manure
for gardens. The process
starts in the Karn where
some of the manure will
he stored to break down. It
is then put through the mix
mill the Wellstcads used in
their hog production,
bagged and ready for the
local market. Time limita-
tions prohibit them from
expanding in this arca
right now.
They also run a small
market garden growing
asparagus, raspberries and
glads to name a few; and
Brian turns his hand to
making garden furniture
when he has spare time.
"This is a great coun-
try," says Brian. "You can
make a living doing what
you want. I'm glad we got
into rabbits. It has kept us
on the farm."
