employ private inspectors to see that

Roy.al Doughnuts. -One pint sweet
milk, half pint lard melted in the
mint, half pint potato yeast (or its
equivalent in other yeast), three
even cups white coffee sugar, three
eggs, one teaspoon soda. dissolved in
half cup hot water, one teaspoon
ground cinnamon and half a grated
nutmeg. Mix In the manner as for
cake, and then add enough sifted
flour to. make a. dough that is still
enough to lee worked without stick-
ing to the board. Prepare in the
evening and let stand in a. warm
place over night. In the morning,

and knead the 'dotigh well. Wash
the bowl, rub Well with lard or but-
ter and return the dough. When it
is light again, warm and flour the
board, turn the dough out on it,

Ginger Cake. --One cup molasses;
2-3 cup sour milk, one tablespoon_
ehorteninh, one teaspoon soda dise
solved in water, half teaspoon each
of ginger, cinnamon and cloves. Stir
in dour to make it about the same
consistency as for other cake. Fut
in a square tin, sprinkle with sugar
and bake in a moderately hot oven.,
Angel. Cocoanut Cake.-d13eat to a
cream one cup butter and two cups
powdered sugar, a.dd three cups sift-
ed flour, half cup sweet rnilk and the
whites of eight eggs, beaten to a
stiff froth. Beat for 15 minutes.
Then add two teaspoons baking
powder and one of almond flavoring.
Bake in jelly cake pans and spread
with grated cocoanut, putting a
very thick layer on tole.
Omani Cake. -Three eggs, one cup
sugar, two tablespeone buttdie three
tablespoons sweet milk, three even
teaspoons baking powder, 1 i• cups
flour. Beat the yolks of the „eggs
with sugar and butter to a cream.
Add the milk., then sift in the -bak-
ing powder and flour. Add the
whitee of theeggse well beaten, the -
