Recipes to put you in the spirit of the season It’s winter and that means another weekend spent indoors, dodging the cold and watching the snow fall. But the wintery weather offers an ideal opportunity to put your cooking skills into action - in the form of cookies. Bake up a dozen with the kids, treat colleagues, serve them at a party, or mail a batch to distant loved ones. And, of course, indulge in them yourself! These Snowflake Brownie Diamonds and Frosty Snowmen from The Christmas Cookie Deck; (Chronicle Books), are sure to put you in the spirit of the season. You’ll have so much fun making them that you won’t mind spending time in the kitchen. SNOWFLAKE BROWNIE DIAMONDS Makes about 3 dozen 2 tablespoons instant-coffee powder 2 tablespoons hot water 5 ounces bittersweet or semisweet chocolate, coarsely chopped 3/4 cup plus 2 tablespoons unsalted butter 1/2 cup all-purpose flour 1/2 cup ground toasted almonds or skinned, toasted hazelnuts 2 tablespoons unsweetened cocoa powder 4 eggs 1 1/4 cups granulated sugar 2 teaspoons vanilla extract Sugar Topping: 3 tablespoons powdered sugar 2 tablespoons unsweetened cocoa powder Preheat oven to 350° F. Grease 9- by 13-inch baking pan. In the top of a double boiler, combine coffee powder, water, chocolate and butter. Place over hot water and heat until melted, stirring occasionally. Remove from heat. In a bowl, stir together flour, nuts and cocoa. In a large bowl, beat eggs until light. Beat in granulated sugar and vanilla. Stir in chocolate mixture and flour mixture. Spread in prepared pan. Bake for 22 to 25 minutes or just until set. Transfer to a rack and let cool. To make sugar topping, place powdered sugar and cocoa in a sieve and dust the tops of uncut brownies. Cut into 11/2-inch diamonds. FROSTY SNOWMEN Makes about 6 dozen A shiny, transparent glaze Fashion tips for the holiday season perfumed with lemon and raspberry adorns these tender butter cookies. Cut out other decorative holiday shapes such as stars, bells, bears, angels or trees. 1 cup powdered sugar 1 cup unsalted butter, at room temperature 1 egg yolk 2 teaspoons grated lemon zest 2 1/4 cups all-purpose flour 1/8 teaspoon salt Glaze: 2 cups powdered sugar 2 tablespoons fresh lemon juice 1 tablespoon framboise (raspberry) liqueur or water In a bowl, cream together sugar, butter, egg yolk, and lemon zest until light in colour. Add flour and salt and mix to form a dough. Shape into a ball, wrap in plastic wrap, and chill until firm. Preheat oven to 375 F. On a lightly floured surface, roll out dough about 3/16-inch thick. Using a 21/2-inch snowman cookie cutter, cut out cookies. Place on greased baking sheets. Bake for eight to 10 minutes or until lightly browned. Transfer to rack to cool. To make glaze, in a bowl, stir together sugar, lemon juice and liqueur or water to make a thin, transparent coating. Spread on cookies.
