Country Fare By Patricia Ham, Auburn School House Students enjoy co-op program Hoping you will enjoy and use some of the recipes I will be giving each month. They have all been tested by me in my home, and will come from many sources. They are easy family food that teenagers and parents will enjoy. DUTCH LETTERS 8 oz. almond paste l egg I cup sugar Combine well and chill at least one hour. Pastry: 3 cups all-purpose flour 3/4 tsp. salt l 1/2 cups butter 1/2 - 2/3 cup ice water 1 egg yolk Combine flour and salt; cut butter in until it resembles coarse crumbs. Add ice water gradually until pastry is well moistened; shape into a ball. Cover and let sit 30 min. Divide into three parts. On lightly-flour surface roll each piece into an 8" square. Cut each square into four 8 x 2' strips. For each of the 12 strips roll about 1 tbsp, almond paste into an 8" rope. One at a time moisten dough edges with water. Close dough over almond paste filling; seal edges and ends and shape into S shapes. Brush with an egg wash of 1 yolk mixed with 1 tbsp, water. Bake for 30 - 35 minutes at 350°F. HONEY BUTTER For each 1/4 lb. of butter, use 1/3 - 1/2 cup honey depending on your taste and the strength of the honey. 'Some honeys have a stronger flavour than others. Cream the butter and gradually blend in the honey, beating up smooth and creamy. Pack into jar or plastic tub; cover and store as butter. Enjoy! BUY? SELL? L Wingham > music 326 Josephine St. 70 Court House Square / Goderich TINY FRUIT CAKES 1/2 cup unsifted cake flour 1/4 tsp. cinnamon 1/4 tsp. salt 1/8 tsp. baking soda 1/4 cup brown sugar 1/2 cup mixed candied fruit 2 tbsp, candied citron 1/4 cup currants 1/4 cup pecan pieces 1/4 cup apple juice 8 tbsp, butter 1 large egg 1/4 cup molasses 2 tbsp, milk 1 tsp. vanilla In a small bowl, stir together flour, cinnamon, salt, baking soda and’ brown sugar. In a food processor with the metal blade, process the candied fruit, citron, currants, pecans and apple juice until well combined. Add the butler, egg, molasses, milk and vanilla until well blended. Add the flour mixture and pulse until well incorporated. Spoon into mini-muffin tins less than 1/2 full. Bake at 325°F. for 15 - 17 minutes. These little cakes are cooked when they shrink away from the sides of the pans and the tops spring back when lightly touched with a finger. Turn out and cool on a wire rack. Store with wax paper between each layer in cookie tins. Can be frozen. OLD-FASHIONED LEMON SAUCE 1/2 cup sugar 1 1/2 tbsp, cornstarch 1 cup hot water 2 tbsp, butter Finely grated rind of 1 lemon 2 tbsp, lemon juice Mix sugar, cornstarch and a pinch of salt, in a rather small heavy sauce pan. Stir in the hot water gradually. Cook over moderate heat about 5 minutes. Remove from heat; stir in lemon rind, butter and lemon juice. Great over gingerbread! A physical trainer has this benefit in their job. I live in Blyth. I’m a Grade 12 student in my final year at F.E. Madill Secondary School. I am currently enrolled in the co­ operative education program. I have had the privilege of being at the North Huron Wescast Community Complex fitness centre as my placement. There are two main components to the job: training the clients to better themselves physically, and preventative maintenance. I cannot work with clients on my own, but I do follow and observe my co­ workers while they are working and I am learning to properly train people by doing so. My co-workers are extremely friendly and helpful to me in many ways. They have been very open and insightful in showing me how to properly workout; this in turn will help me with clients in the future. The second part of the job is the daily preventative maintenance. This includes cleaning mirrors and machines to vacuuming and mopping floors. The cleaning is not only meant for preventive measures for it also makes for a cleaner, healthier environment of every user. I took this course and chose the fitness centre to learn what being a fitness trainer is all about as I am thinking of becoming a trainer and wanted practical experience. I am also learning many useful skills, like communication and customer service, which will help me in any job in the future. I think the co-op program is a great course that is offered in our school and would recommend it to anyone. By Levi Cook I am a co-op student at F.E. Madill Secondary School. I am doing my co-op placement at Dan’s Auto Repair. Dan Snell is self-employed and has no other full-time employees. I highly recommend taking the co­ op course that the high school offers. It is a good way to decide if you want to enter that field of work after you are done your schooling. MUNICIPALITY OF MORRIS-TURNBERRY TAX INSTALLMENT NOTICE The final instalment of the 2005 final property taxes is due on Friday, November 25, 2005.
